If you’ve seen videos of me cooking chicken, you’ll know I’m totally a legs and thighs kind of a gal. They’re not as “neat” as the breast cut, but with their slightly messier shapes, legs and thighs offer me something more important…flavour and juiciness.
I will concede that chicken breast has its place, particularly when I’m cooking chicken parmigiana or Japanese katsu for example. But when it comes to braising, stir-frying or roasting…I’m typically choosing thigh fillets or maryland cuts (for the oven). And for family dinners, chicken thighs and drums are really affordable, so you can cook something amazing and not break the bank.
