Cook this Thai restaurant favourite at home with no fussy prep or faff required. Simply add chicken, potatoes and onion to the ingredients in Marion’s Kitchen Thai Massaman kit and you have all you need for a perfect curry every time.
1 tbsp vegetable or canola oil
1 x Marion’s Kitchen Thai Massaman Curry Meal Kit, which includes:
– MASSAMAN CURRY PASTE
– COCONUT MILK
– DRIED HERBS & CHILLI
– PEANUTS
800g (1 lb 12 oz) chicken thigh fillets, cut into bite-sized chunks
2 medium potatoes, quartered
1 onion, peeled, cut into large chunks
finely sliced long red chilli, to serve
fresh coriander (cilantro) leaves, to serve
steamed rice, to serve

Place a wok or large frying pan over medium heat and add the oil. Once hot, fry the MASSAMAN CURRY PASTE for about a minute or until it starts to smell yummy. Add the chicken and cook for about 3 minutes until it starts to turn golden. Don’t worry about cooking it all the way through at this point – you just want to get some colour on the outside.

Now’s the time to pour in the COCONUT MILK, followed by ½ cup of water.

Stir through those fragrant DRIED HERBS & CHILLIES.

Add in the PEANUTS along with your potatoes and onion. Cover the pan with a lid, turn the heat to low and simmer for 1 hour or until the chicken is soft and tender. Remove the lid and simmer for another 10 minutes to thicken slightly. Transfer to a serving bowl and top with red chilli and coriander leaves. Serve with steamed rice.

Instructions were super easy, made mine with pork mince and cos lettuce cups, the flavours were delicious, I would say that they were better than I have had at any restaurant 👍😋
