I’m always looking for ways to incorporate that miso umami into dishes – this Miso Maple Glazed Salmon recipe has that delightful blend of savoury and sticky-sweet flavours we love. Super quick but 10/10 impressive. I love serving this one with my Creamy Japanese Potato Salad.
Miso Maple Glazed Salmon
4 x 200g salmon fillets, centre cut, about 4cm thick through the centre
creamy Japanese potato salad, to serve (optional)
Miso marinade:
¼ cup white miso
¼ cup mirin
¼ cup maple syrup
1 tablespoon Japanese soy sauce

Preheat oven to 180C/360F.

In a large bowl, whisk together the ingredients for the miso marinade.

Line a baking tray with foil. Place the salmon (skin side down, if it has the skin) onto the tray. Spoon over generous amounts of the marinade, being sure to cover the tops and sides of the fillets. Place in the oven and cook for 15 minutes or until the salmon is cooked through.

Serve warm with your choice of sides (I love my creamy Japanese potato salad with this one!).
