Make your salad sing with the flavours of Thailand, courtesy of this spicy and fragrant dressing that heroes Thai red curry paste. It’s equally delicious drizzled over steamed Asian greens, too. Perfect for using up those last bits in the jar!
1 tbsp Marion’s Kitchen Thai Red Curry Paste
¼ cup water
zest and juice of 1 lime
2 tsp sugar
2 tsp apple cider vinegar
2 tsp vegetable oil
1 tsp sea salt
1 tsp fish sauce

In a small bowl, add the Thai red curry paste, water, lime zest and lime juice. Whisk everything together until combined, then add the sugar, vinegar, oil, salt and fish sauce. Give everything another whisk. Serve atop steamed Asian greens or alternatively as a salad dressing.
