In a weeknight dinner rut? Here’s what to cook when you don’t feel like cooking – it’s quick, simple but delivers maximum impact.
Weeknight Spicy Thai Basil Stir-fry
4 garlic cloves, peeled
2 birds’ eye chillies
2 large mild red chillies, roughly chopped
4 tbsp oyster sauce
2 tbsp fish sauce
1 tsp sugar
2 tbsp vegetable oil
500g (1 lb) mince meat (e.g. beef, pork, chicken or turkey mince)
2 large zucchinis, cut into bite-sized chunks
1 cup basil leaves (e.g. Italian basil or Thai basil or a mix of both)
steamed rice to serve (click here to see my recipe for how to cook rice)

Use a mortar and pestle to pound the garlic and chillies to a rough paste.

To make the stir-fry sauce, mix together the oyster sauce, fish sauce and sugar.

Heat the oil in wok or large frying pan over high heat. Add the paste and cook for half a minute. Then add the mince meat and stir-fry for 3-4 minutes or until just cooked. Add the zucchini and the stir-fry sauce. Stir-fry for another 1-2 minutes. Toss through the basil. Remove from heat and serve with the rice.

We love fried rice so I tried this one and its the actual bomb! The best we’ve ever had! The side chilli/fish/lime was a bit of a kicker but I’l make sure to take out more seeds next time – lovely flavour. 🙂

really……the only yt chef i trust tbh……but yeah this recipe is bomb! i do everything but the zucchini; i use the thin eggplant instead, and i chuck in chopped up snake beans just 2 up my vegetable count, ive seen other recipes on yt and theyre all rubbish…..mazza knows best!
