Ingredients

7 oz (200g) bacon, diced

1 lb (500g) brussel sprouts, cut in half

1/3 cup Marion’s Kitchen Sweet Chili (use my store locator to find out where to buy) or any other sweet chili you like

1 tbsp slivered almonds

Steps
  • Step 1

Heat a large frying pan over medium-high heat. Add the bacon and cook, stirring, for 3-4 minutes or until the bacon is crispy and the fat has rendered into the pan. Turn the heat off while you remove the bacon with a slotted spoon (keep the bacon for later).

  • Step 2

Place the pan (with the bacon fat in it) back onto a medium-high heat. Add the brussel sprouts, cut side down. Cook for 3-4 minutes. Then add ½ cup of water. Cover the pan and cook for 3 minutes or until the brussel sprouts are just tender. Remover the lid and continue cooking for a further 3-4 minutes or until there’s a nice dark brown char on the bottom of the brussel sprouts. Turn them over and then transfer to a large bowl. Add the bacon pieces and the sweet chili sauce and toss until well combined. Transfer to serving plate and top with slivered almonds.
