What’s the best cut of beef to use for a stir-fry?

Spoiler: Exxy isn’t always better, my friends.

“When it comes to the best beef stir-fry, what cut should I use?” It’s a great question! Does the most expensive steak give the greatest flavour? Or are the often overlooked cuts the better choice, given the right treatment? It was time to step into Marion’s Test Kitchen to find the best beef for stir frying.

The different cuts of beef

I chose five different beef cuts – chuck, rump, sirloin, scotch and eye fillet – that were widely available in my local supermarket and used them all in a classic super-tender beef stir-fry recipe of mine.

Best cut of beef

They ranged from the most expensive eye fillet (often considered to be the most tender) down to the cheapest chuck steak, otherwise known as gravy beef. In fact, the price difference between the cheapest and most expensive was pretty big: $3.75 compared to $16.

 

Chuck steak is mostly made up of muscle and connective tissue, and to be honest I hadn’t previously considered it as stir-fry material. Here goes!

Slicing your beef

How to cook beef stir fry? Keep your slices nice and thin.

How you slice your steak for a stir-fry is so important, and plays a huge role in how tender your meat will end up. The general wisdom is that you want to be slicing across the grain of your meat.

 

If you take a look at your steak, you should be able to see the grain running in a certain direction. Should you cut with it, your pieces will have long grains running across their surface area, making them harder for you to chew. Take your knife and cut across it instead, and you’ll immediately see the difference in how your slices behave. 

 

For bigger pieces like rump steak, where the meat almost separates into sections with their own grain, I would suggest dividing these sections up firstly. Once that’s done, treat each section as a separate cut with its own grain direction. Check the video above to see what I mean.

 

Oh, and very importantly: keep your slices THIN. No more than 3mm (⅛”) is what you should be aiming for.

The results

Once I’d done my all-important marinating (check my article on how to cook beef stir-fries for the full lowdown on what secret weapons you need), it was time to cook, then test. 

Eye fillet

Gotta admit: I had high hopes for the premium cut. However, as I was stir-frying with the slices, they broke up a lot in the wok. By the time I was done, the finished dish looked like I’d used beef mince instead! Taste-wise, it was still very tender, but the beef almost ‘disintegrated’ in my mouth – just far too quickly for my liking.

Scotch fillet

These strips kept their shape in the wok, which is what you want in a beef stir-fry. Nothing bad to say about this one: it was tender, it tasted nice and soaked up the sauce perfectly. Thumbs up. But can we do it cheaper?

Sirloin (striploin) steak

It was actually kind of hard to tell the difference between this and the Scotch fillet! So for the cost saving between the two, this is my top contender so far in the taste test.

Rump steak

There was a noticeable difference in the beef stir-fry tenderness when I got to the rump. It was by no means tough, but it definitely wasn’t as tender as its predecessors.

Chuck steak (gravy beef)

Well wasn’t this a surprise: I found this cut to be far more tender than the rump… it was on par with the sirloin and scotch fillet, even. Totally unexpected, and really great considering the price difference. 

The verdict? So long as you follow the tips for cutting, prepping and cooking your steak, you can absolutely get away with a budget-friendly cut of beef when making a super-tender beef stir-fry.

What’s the perfect temperature for cooking meat? The answers are right here.

Meat lovers unite! No longer will you need to look at your steaks and wonder ‘Is it ready yet?’ Here’s our handy how-to guide for cooking poultry, fish, beef, pork and lamb.

It’s a common question in the kitchen: how do I know when meat is cooked? There may be lots of hacks about timings or prodding parts of your body to match steak preferences, but one thing you can rely on is science. A meat thermometer can make light work of understanding meat cooking temperatures, especially when you’re dealing with large roasts and have a hungry clan of people waiting to tuck in. So if you’re wondering what is the meat cooking temperature for roast chicken, pulled pork, roast beef and more, bookmark or print off this handy meat internal temperatures guide.

What are meat cooking temperatures?

Put simply, you want the internal temperature of meat to reach a safe point where it’s hot enough to kill harmful germs that can cause food poisoning (and taste good, of course). While it may be relatively easy to cook smaller cuts of meat, when you’re dealing with a whole bird or joint, it can get tricky. 

 

And with steak, everyone has a preference for the degree of doneness. Are you a rare, medium rare, medium, medium well or well done kinda person? It’s all determined by the juiciness levels, colour and, of course, internal temperature of beef when cooked.

How to use a meat thermometer

The simplest way to check if your meat is cooked properly is by avoiding the guesswork and using a meat thermometer. Using a meat thermometer is often overlooked in home cooking, but it’s definitely something more home cooks should be utilising if you want to avoid cutting your meat to check if it’s cooked properly. Insert the thermometer probe in the thickest part of your meat, away from fat, bone or gristle.

 

For chicken or turkey: Insert the thermometer into the inner thigh area, avoiding any bone.

For ground meats: For dishes like meatloaf, place the thermometer probe into the thickest area of the dish.

For beef, pork, lamb (can be roasts, steaks or chops): Always insert the thermometer into the centre of the thickest part, keeping away from any bone, fat or gristle.

 

A personal favourite of mine? I find Meater’s range of thermometers invaluable in the kitchen. Not only do the standalone probes mean no tangle of wires coming out of my oven, but I can also set my desired internal temperature via the (ridiculously easy-to-use) app on my smartphone. Once my roast hits the perfect temp, I get an alert. No more guesswork! Perfectly juicy tender turkey is a joyous thing… so it pays to use a meat thermometer! 

Hot tip! When you take your meat off the heat, it will carry on cooking by up to five degrees. Therefore remove it before it gets to your desired internal temperature by this amount and let it do its residual thang.

Internal cooking temperatures for meat

What temperature should meat be cooked until? Well, it varies. But it’s so important. Undercooking meat, poultry and other foods can be dangerous – so you want to avoid it at all costs. Checking the internal temperature is the easiest and most effective way to ensure meat is cooked. Here’s what the Australian government suggests as safe temperatures for cooked meat (you can find the Food Standards Agency equivalents here):

 

Fish: 63°C/145°F

Minced meat, sausages: 71°C/160°F

Beef, veal, lamb, pork: In terms of cooking beef, there are multiple temperatures you can aim for. If you prefer your beef rare you’ll want to aim for 50 degrees celsius (122 degrees fahrenheit), 63°C/145°F for medium rare, 71°C/160°F for medium and 77°C/170°F for well done (see note on resting times below)

Ham precooked (to reheat): 60°C/140°F

Chicken and turkey (whole), thighs, wings legs, breasts: 74°C/165°F

Hot tip! It really does help to take your raw meat out of the fridge to warm up slightly before you cook it. Keeping food safety techniques in mind (I’m not saying leave it out overnight or in the hot sun!), you want to take the chill off the protein to help ensure it cooks evenly all the way through.

Resting times for meat

Resting is an important part of the cook process – it helps keep things juicy and tender. However, top tip: meat can continue to cook while resting, so try removing it from the heat when it’s about 3–6°C under your target temperature so it doesn’t go over that magic number.

 

How long to rest a beef roast for: 10–20 minutes before carving

How long to rest steaks for: 3-5 minutes before serving

When it comes to cooking, I favour a more minimalist approach. I’m not one for filling my kitchen cupboards to bursting with heaps of ingredients I only ever use once. Instead, I tend to favour a select few staples, which I then mix and match to create both old favourites and new classics. So, when it comes to stocking up, where to start? Here are a few of my ultimate pantry essentials to get you on your way…

Soy sauce

I’d suggest investing in three – yes, three! – varieties of soy sauce to ensure you’ve always got the most suitable one to hand. I like to use ‘light soy sauce’ as my everyday variety (use this if ever a recipe of mine calls for soy sauce), dark soy sauce (which adds a more rich colour to dishes), and a dark sweet soy sauce, like Indonesian kecap manis. For more information, read my article about everything you wanted to know about soy sauce.

Fish sauce

I’m half Thai, so fish sauce is an obvious choice for me! It’s featured in all my Thai dishes and is awesome at adding seasoning and saltiness to a dish.

Oyster sauce

Amazing for stir-fries and adding savoury, umami goodness to dishes. I even like to use oyster sauce when cooking my fusion pasta dishes – like with my Spicy Garlic Butter Linguine! This garlic butter pasta YouTube video blew up my channel, and if you’ve made it you’ll know why. And for all you doubters? Don’t knock it until you’ve tried it…

Spicy Garlic Butter Linguini

My spicy garlic butter linguine uses oyster sauce to bring on the umami.

Chinese Shaoxing wine

I cook with this a lot and love the fragrance and almost floral notes it lends to a dish. As a general rule, you can usually substitute apple juice or stock for this if you want to keep your cooking alcohol-free.

Gochujang

If you’re familiar with my recipes, you’ll have noticed I’m slightly addicted to gochujang. It’s a Korean chilli paste made from red chillies, rice and fermented soy beans, and has a deep, dark red colour and a slight smoky flavour. Try it in my Korean Fried Chicken Wings!

Doubanjiang

This is a spicy fermented chilli and broad bean paste from Sichuan province in China. It has a magically spicy umami kinda vibe.

Thai (or Chinese) chilli powder

I know a lot of your typical supermarkets will only sell a super-fine, ground powder, but I tend to prefer a mix of chilli flakes, seeds and powder. My top tip? Head to your local Asian supermarket and look for a Thai or Chinese brand, as they’re more likely to offer that winning combo.

A hot chilli sauce

An absolute essential (have you seen my article on the best things to put sriracha on?!)! I love my spicy Coconut Sriracha for that subtle level of creaminess it offers, but any hot sauce will do. I’ve also got a homemade Thai Sriracha sauce recipe if you’re feeling inspired!

Homemade Thai Sriracha Sauce

My homemade Sriracha will keep in the fridge for up to six months.

Miso paste

My preference for miso is the ‘white’ or ‘sweet’ miso, also known as shiro miso. It’s less salty than darker varieties of miso and has a lovely savoury flavour. Find out all about miso here. Bonus: it even goes well in desserts, like with these chocolate, peanut butter and miso cookies and miso cheesecake with caramel sauce.

Vinegar

I generally use your run-of-the-mill white vinegar for all my Asian cooking. But when a recipe calls for that little extra summit summit, I like to use a Chinese black vinegar called chiankiang vinegar. But anytime I specify this black vinegar, feel free to use a regular white vinegar mixed with just a dash of balsamic as a handy substitute.

Other pantry essentials

You’ll never get stumped on what oil to cook with again

I’d also recommend the following extras…

 

– Sesame oil: For adding a lovely flavour and aroma to dishes.

– Vegetable oil: It’s an ideal oil for deep-frying and general cooking.

– Cornflour (cornstarch): For thickening sauces.

– Panko breadcrumbs: Give a lovely texture to anything you’re crumbing.

– Shrimp paste: It’s funky, but fabulous. Try it in my Indonesian Nasi Goreng.

– Palm sugar: I love the flavour of this traditional Thai ingredient, but feel free to use regular white sugar if you can’t get hold of it.

– Star anise: Wonderful for levelling up your soups and stocks.

– Cinnamon sticks: Another of my favourite spices.

– White pepper: Such a classic Thai flavour!

I’m a HUGE sucker for dumplings. Gyoza, dumplings, wontons, potstickers… what’s not to love about a bite-sized parcel of pure joy? One of the best things is the versatility. You have free reign to fill your little vessels with whatever your heart desires, whether that’s something meaty and juicy, or plant-based and virtuous. With that in mind, these dumpling recipes will have you filling, folding, steaming and frying your goodies like a professional in no time. 

 

Fill ‘em with your fave combos, whip up your own out-of-this-world dumpling sauce (hello, chinkiang vinegar) and get ready for melt-in-your-mouth morsels of utter deliciousness.

The perfect ratio of chewy wrapper, crispy base and that sweet prawn, water chestnut and garlic chive filling. Why not go all out and make your own dumpling wrappers, then make a day of crafting these delights with your family or friends.

I’m calling it – har gow (aka Chinese prawn dumplings) are the Mount Everest of the DIY dumpling world: they’re quite possibly the trickiest dumplings to make from scratch at home. Many have tried, many have failed (yep, including me). Well, strap yourselves in – I’ve finally reached the har gow peak after 10 YEARS of attempts and nailed those pesky wrappers. New dim sum level unlocked.

The secret to these epic dumplings is all in the light and silky filling: pork, spring onion and ginger moistened with chicken stock and egg make the magic happen. Wontons can be prepped ahead and frozen or refrigerated, then cooked from frozen for when that dumpling craving hits.

When dumplings meet chicken satay, magic happens. These pretty-as-a-picture beauties are parcels of pure joy – everything about them makes me happy, from the shape to the flavourful filling.

Spiced lamb dumplings with chilli oil for dipping… does it get any better? And these ones are just so easy to make. It takes hardly any time at all to whip up the filling, fold and cook. Perfect for when you’re in dire need of a dumpling fix, quicksmart.

You might know these as siu mai, but in Thailand these pork and prawn dumplings are called kanom jeeb. Fold wonton wrappers around the pork and prawn paste and cook in a steamer for a classic street food treat. These are the perfect finger food for your next party or get together.

Flavourful beef and oozy mozzarella… in a dumpling? One million times, yes. The golden chewy bottoms and melting cheese are taken to new heights with a spicy dipping sauce, too. Cheesy. Beefy. Spicy. Divine.

Plump, juicy dumplings with the perfect bouncy filling, smothered in a spicy red oil… a plate of pure heaven.

Now here’s a treat you’re going to want to get in on. Here, the gorgeously smooth prawn filling is offset perfectly with the traditional Thai condiments of garlic oil and nahm jim. Spicy, salty, steamed – they’re all the things, my friend.

These dumplings taste like a Japanese gyoza and a spicy Thai stir-fry had a love child. You’ll enjoy the crackle of the crisp cornflour lace as you pop the caramelised dumpling into your mouth for a delicious pork, basil and chilli flavour bomb. A must-try.

If you love dumplings as much as I do, then you’ll adore these smoky, spicy, chicken-y parcels of homemade goodness. And also… can we have a minute of appreciation for that beautiful triangle fold? You want to ensure your meat doesn’t dry out, so definitely stick with chicken thighs for the best result. Glorious!

These dumplings are a pure celebration of Vietnamese flavours and are so incredibly fragrant. You’ll have loads leftover too, so pop them in your freezer to whip out whenever you need a quick dumpling fix and cook them straight from frozen.

Sometimes the simple things are the best… like these prawn dumplings, which are classic, elegant and oh-so epic. Speaking of epic, the spicy red oil I’ve paired them with is unbelievably good. These will become a fast favourite.

If you’ve been around for a while, you’ll know I love all things spicy and all things dumpling. So it’ll come as no surprise that these spicy pork dumplings are my not-so-secret obsession. 

Lamb flavoured with garlic, spring onion and soy sauce, all nestled up snugly in a little dumpling wrapper: in other words, a flavour sensation. Make them ahead of time and store in the fridge or freezer, then steam, boil or fry. Top with a spicy soy sauce and you’re ready to dive in.

Is there anything better than juicy, bouncy, steamed dumplings? This celebration of pork and crab is absolutely delicious, and my simple tips and tricks will help you achieve the perfect filling texture. 

Juicy, plump pork dumplings with lashings of spicy chilli oil… it doesn’t get much better than this. It might be a labour of love but if you want to make folding extra easy, make your own dumpling wrappers. A bit of a longer process but totally worth it – promise!

How to make gyoza dumplings EVEN better? The answer is all in the crunch. Level up your gyoza with this crispy latticework bottom that’s pure, supersonic crispy joyousness.

How to make soup dumplings, aka xiao long bao, even better? Add some knockout pho broth! Totally tasty, totally worth the effort.

All together now: oh my gyoza! These dumplings are plump, juicy and packed full of epicness. And that spicy, nutty sauce truly is the secret to their success.

It’s no secret I’m a huge dumpling fan, and these beefy parcels of heaven are a pure flavour sensation. There’s a Sichuan hum in the background, and combined with that chilli oil kick on top? Absolutely epic.

Dim sim is really popular here in Australia: it’s a Chinese-inspired dumpling made with meat and vegetables, and looks very similar to siu mai. Now you can make the very best dim sims from scratch. Get set for zero regrets.

These are my go-to dumplings for a fancy (or not-so fancy) dinner party at mine. These silky pork dumplings are infused with Thai Green Curry Paste and look like they’ve been plated in a restaurant. In reality, they’re super simple to make and the flavour is so bomb you’ll still be hearing the applause weeks later. 

These gorgeous gyozas feature sweet, delicate shrimp as the star attraction, made even more epic with a blend of traditional Thai flavours. It wouldn’t be a proper dumpling fix without a spicy dipping sauce, and this one is a total knockout.

What’s better than dumplings? Dumplings dunked in cheesy breadcrumbs and fried, that’s what. These moreish, crunchy parcels are full of savoury umami goodness, and the chilli adds the perfect spicy finish.

Pork and prawn siu mai (or shumai) dumplings are a classic part of a yum cha or dim sum menu, and for good reason… they’re delicious. The great thing about them as well is that they don’t require any fancy folding technique, so they come together fairly quickly. Make sure you vigorously mix the filling to get the characteristic ‘bouncy’ texture’, plus keep some of the prawns roughly chopped so you get little pops of texture throughout.

I’m going to end my round-up of the best dumplings recipes with this curveball – it might not be what you’re expecting, but *exhale* trust me on this one. This quick and simple idea for deep-fried brie cheese dumplings will turn you into the talk of the town – it’s the perfect party food, appetiser or share plate to enjoy with loved ones. And don’t forget the candied chilli for the perfect sweet-n-spicy pop!
