For the sauce, combine the chicken stock, oyster sauce, soy sauce and Shaoxing wine in a small saucepan over high heat. Simmer for 2 minutes. Stir through the cornflour mixture, then simmer for another minute until the sauce has slightly thickened. Turn the heat off and stir through the sesame oil. Remove pan from heat and set aside for later.

Step 2

Heat a non-stick frying pan or wok over high heat. Add 1 tablespoon of vegetable oil, followed by the pork and prawns. Stir-fry for 2 minutes or until just cooked. Transfer to a plate and allow to cool completely.

Step 3

Meanwhile, in a large bowl, whisk the eggs with the cornflour and 1 teaspoon of the vegetable oil. Add the cooled pork and prawns and spring onion.

Step 4

Place a wok or frying pan over medium-high heat. Pour in the remaining 3 tablespoons of oil. Wait a few seconds for the oil to heat up, then pour in the egg mixture. The egg should start to set and puff at the edges immediately. Once the egg is almost set in the middle. Then flip the omelette over (you may have to do this in pieces). Cook until just set.

Step 5

Scoop out chunks of the omelette onto a serving plate. Reheat the sauce (add a little water if it is too thick) and pour over the omelette. Serve immediately.

Egg foo young is a Chinese omelette that often includes protein such as pork, chicken or prawns, and vegetables. It is often served smothered in a thickened savoury gravy sauce. This popular Chinese dish is a popular takeaway classic around the world.

Pretty much anything you like – it’s a great fuss-free way to use up leftovers in your fridge! If you are using meat in your egg foo young Cantonese omelette, it’s a good idea to cut it into small bite-sized pieces (or use ground meat) so that it cooks quickly without overcooking the egg. Also, spring onion (scallions) is a great option, as well as vegetables such as capsicum (bell pepper) and mushrooms. However, as these have a high water content, it’s helpful to pre-cook these a little first to release some of the liquid.

For the steamed egg, whisk the soy milk, eggs and soy sauce in a large bowl until combined. Pour the egg mixture into a shallow serving bowl (leave yourself about 2 centimetres leeway for the egg to expand as it cooks). Place the bowl in a bamboo steamer over a wok or pan of boiling water and steam for 10 minutes or until the egg is just set. Turn the heat off but keep warm by leaving the egg in the steamer while you make your pork.

Step 2

Heat the vegetable oil in a wok or frying pan over medium-high heat. Add the garlic, chilli and ginger. Stir-fry for half a minute until it’s smelling lovely. Next, add the pork and stir-fry for a couple of minutes until the pork is just cooked.

Step 3

Add the doubanjiang chilli bean paste and the Sichuan peppercorns, then stir-fry for another half a minute to release all those wonderful flavours and aromas. Stir through the soy sauce, oyster sauce, Shaoxing wine, sugar and chicken stock. Simmer for 4-5 minutes or until the sauce has thickened slightly. Turn the heat off and toss through spring onion.

Step 4

Top the steamed egg custard with the spicy pork and drizzle with chilli oil, if using. Serve warm.

Doubanjiang is a Chinese fermented broad bean and chilli paste. It can be found at an Asian grocer or ordered online.

Place a pot over water over high heat and bring to the boil. Gently place the eggs in the water. Stir the eggs every so often in the first few minutes to try to ‘centre’ the egg yolk. Gently boil the eggs for 6 minutes. Drain and rinse under cold tap water to cool them down.

Step 2

Meanwhile, mix together the marinade ingredients in a large bowl.

Step 3

Carefully peel the eggs and place them in the marinade. Refrigerate for at least 4 hours or overnight. To serve, remove the eggs from the marinade. Slice in half and place on top of your steamed rice. Drizzle over plenty of the leftover marinade. Top with extra spring onion and serve.

Don’t be alarmed… but mayak in Korean means ‘illicit’ when referring to drugs, which is why they’re sometimes called ‘drug eggs’. While there are no illegal substances involved in the making of this Korean recipe, we’re thinking the name comes from the fact they’re so darn addictive.

The best way to peel a soft boiled egg is to lightly bash the shell with the back of a spoon until the shell is cracked all over. Hitting the egg shell with a spoon gives you more control than tapping it on the kitchen counter, and reduces the risk of any egg yolk escaping! Once your soft boiled eggs are cracked all over, start peeling at the rounder end where there is likely to be an air bubble – there’ll be a gap between the egg white and the shell. If there’s no air bubble at that end, start from the pointy end of the egg.

We like to eat mayak eggs with steamed rice and some of that epic marinade drizzled over as a banchan (Korean side dish) or even as a meal on their own. They also make a great substitute as ramen eggs.

Place a wok or frying pan over medium-high heat. Add the chilli crisp and, once it’s sizzling, add the spinach. Stir-fry for a minute or until it’s just wilted. Crack in the eggs. Turn the heat down to low and cook until the whites have just set and the yolks are runny (or until cooked to your liking).

Step 2

Sprinkle the eggs with grated cheese and the sesame seeds. Allow the cheese to melt for a minute or so, then slide out the whole egg structure on to plate. Sprinkle over the spring onion.

Step 3

Serve with toast or rice… whatever takes your fancy.

Place the steak in the freezer for 60-90 minutes or until just firm.

Step 2

Place the rice in a bowl and wash under running water, rinsing 3-4 times. Now place the rice and 2¼ cups water in a rice cooker and cook. Alternatively, place in a saucepan over medium heat and bring to the boil. Cover and reduce the heat to low and cook for 12-13 minutes or until the water is absorbed and the rice is tender. Turn the heat off and allow the rice to steam with the lid on for another 10 minutes before serving.

Step 3

Meanwhile, mix the ingredients for the sauce together in a small bowl. Set aside.

Step 4

Use a sharp knife to slice the beef as thinly as you can.

Step 5

Divide the rice among serving bowls.

Step 6

Now let’s fry! Heat the oil in a large frying pan over high heat. Add the onions and stir-fry for a minute. Then add the beef. Spread the beef out in the pan and allow to colour on the first side for a minute before tossing the beef around. Drizzle the sauce around the sides of the pan, so that it heats up and bubbles quickly. Toss the beef through the sauce. Then move the beef to one side of the pan so that only the sauce is directly over your heat source. Allow the sauce to bubble and thicken for 1-2 minutes. Toss the beef back through the sauce. Remove from heat and spoon the beef over the rice in each bowl. Top with half an egg, pickled ginger and spring onion and serve.

Gyudon is the total champion of comfort food. A popular Japanese dish, it’s essentially thinly sliced beef cooked in a slightly sweet sauce consisting of mirin and soy sauce. It’s then served over rice as the ultimate rice bowl recipe.

Wagyu is a Japanese cattle breed: ‘wa’ means Japanese and ‘gyu’ means cow. As for wagyu beef itself, it is a highly marbled beef, which gives it a unique taste and high level of tenderness. Marbling refers to the fine flecks of fat that run through beef, also known as intramuscular fat. In fact, wagyu is highly regarded by chefs and food lovers all over the world.

Some health experts suggest that there is a higher mono-unsaturated to saturated fat ratio in wagyu steak compared to other beef. The saturated fat is also slightly different, as it is thought to have less impact on cholesterol levels.

Heat 2 tablespoons of the vegetable oil in a wok or large frying pan over high heat. Add the onion and garlic and stir-fry for half a minute or until just softened.

Then push everything to one side and add the egg to the empty side. Use a spatula to move the egg around so that it forms a thin omelette. Once the egg is almost set, break it up and mix it into the other ingredients. Add the rice, soy sauce and spring onion, then stir-fry until well combined.

Ah, the age-old question: how to cook rice when making fried rice! Lucky for you I’ve got the goods so you can enjoy all your favourite fried rice recipes. The secret is all in the prep and the water to rice ratio, which is 1:1. Because you want the rice grains a little drier for fried rice, you want to add an extra ¼ cup of water to the pan – and this stays the same no matter how much long grain rice you’re using. So 8 cups of rice would be 8¼ cups of water. Also, try to use day-old rice as it’s much better.

Jasmine rice, also known as fragrant rice, is a variety of long-grain rice that is predominantly grown in Thailand, Laos, Vietnam and Cambodia. It has a distinctive aroma and a sweet and nutty flavour that makes it different to other types of rice. Why is it called jasmine rice? Well, it’s actually not because it smells like the jasmine flower – it’s because it’s the same colour as it. It’s quite similar to basmati rice, but is much more delicate in consistency.

For the prik nam pla, mix the fish sauce and chillies in a small bowl. Squeeze in the lime juice and leave the wedges sitting in the sauce (it adds extra tang as it sits and I quite like the way it looks too).

Step 2

Heat the oil in a wok over high heat. When the oil is hot, add the onion and stir-fry for a minute. Add the garlic and chicken and stir-fry for 2–3 minutes or until the chicken is almost cooked. Add the gai lan. Stir-fry for another 2 minutes or until the chicken is cooked and the greens are tender. Toss through the tomato.

Step 3

Move everything to the side of the wok. Add the extra teaspoon of oil into the empty side and then pour in the egg. Allow to set for a minute or so. Then flip and scramble the egg using your spatula.

Step 4

Add the rice, soy sauce, fish sauce, sugar and pepper. Stir-fry for 1-2 minutes or until the rice grains are evenly coated. Divide among serving plates and serve with the prik nam pla, cucumber and lime.

Preheat your oven to 140°C (280°F). Place the pork shoulder in a roasting tin lined with baking paper. Rub the fragrant spice mix from the BBQ Pulled Pork Kit all over your pork. Now scoop out 2 tablespoons of the Sticky Chilli BBQ Sauce and rub that over the pork too (save the rest of the sauce for later). Pour in enough water to reach 2cm up the side of the pork (the extra liquid keeps your pork juicy and creates a sauce at the end). Cover the pork with baking paper and then enclose the entire tin with foil. Slow roast for 3 hours or until fork tender, then remove from oven.

Step 2

Transfer the pork to a large bowl or tray. Use forks to pull the pork apart. Mix through the rest of the BBQ sauce and drizzle over some of the pan juices. Season with salt to taste.

Step 3

Preheat your oven to 200°C (390°F). Cook potato gems on a baking tray for 15 minutes or until golden and crispy. Remove tray from the oven and increase temperature to 220°C (430°F).

Step 4

Arrange 250g (9 oz) of the cooked pulled pork (if you’ve made the pulled pork from scratch, save the rest for other recipes such as our Pulled Pork Roti Wraps  and Leftover Pulled Pork Spring Rolls ) and tater tots evenly in a greased skillet. The pork should be nice and saucy – if you need to loosen things up a little or like things extra saucy, feel free to add some sweet chilli sauce or some Marion’s Kitchen Sticky Chilli Ginger Marinade. Sprinkle over the mozzarella cheese, and mix until roughly combined. Make a small well on one side of the skillet and crack in the egg. Transfer the skillet to the hot oven and cook for 8–10 minutes or until the egg is cooked to your liking.

Step 5

Garnish with red chilli and coriander leaves. Serve warm as is, or with toasted sourdough.

– If the Marion’s Kitchen BBQ Pulled Pork Kit is unavailable where you are, you can use 250g of leftover pulled pork from another recipe of your choosing and skip straight to Step 3.
