Crispy sesame prawn toast is WAY better when it’s homemade. And this air fryer recipe version of the much-loved Thai classic skips the oil while still delivering massive crunch. Sink your teeth into this appetiser and head on up to food heaven.
350g (12 oz) peeled and deveined prawns
150g (5 oz) diced firm white fish e.g. barramundi, snapper, tilapia, sea bass
8 makrut lime leaves, destemmed, finely sliced
2 tbsp finely chopped coriander (cilantro) stems
1 egg white
2 tsp sea salt
½ tsp white sugar
5 slices thick white bread
white and black sesame seeds, for sprinkling
cooking oil spray
sweet chilli sauce, to serve

Place the prawns, fish, makrut lime leaves, coriander, egg white, salt and sugar in the bowl of a food processor. Pulse until a smooth paste forms. Spread the mixture generously onto each slice of bread so that there is an even, 1cm-thick (about ⅜”) spread of paste. Place the sesame seeds onto a plate and lightly press the paste side of the bread into the seeds. Cut each piece into half.

Working in batches, place prawn toasts into the air fryer basket. Spray generously with cooking oil and cook for 10 minutes at 200°C/390°F or until golden and crispy. Serve with sweet chilli sauce.
