Microwave Apple Pie with Five Spice

Sweet and tart. Flaky and buttery. This apple pie may have an untraditional cooking method, but who gives a fiddle when it tastes this good. Grab your apples, unroll your pastry and let’s bake up a beaut.

Microwave Apple Pie with Five Spice

Ingredients

100g (3.5 oz) unsalted butter

35g (1.2 oz) plain (all-purpose) flour

50g (1.7 oz) brown sugar

6 Granny Smith apples, peeled, cored, cut into thin slices (about 3mm, or ⅛ inch)

1 tbsp ground cinnamon 

½ tbsp five spice

1 roll shortcrust pastry, thawed

1 egg, beaten

cream, for serving

Steps
  • Step 1

    Place butter in a microwave safe bowl and cover with a microwave safe plate. Heat on full power for 40 seconds or until the butter is melted. Carefully remove the bowl from the microwave and take off the plate. Add the flour to the melted butter and whisk until mixed thoroughly. Add back to microwave for 30 seconds.

  • Step 2

    Add the brown sugar and ¼ cup of water to the mixture. Mix through until combined. Re-cover the bowl with the plate, then heat on full power for another 40 seconds or until the sugar has just dissolved. Take the bowl out of the microwave, give everything a stir, then set aside.

  • Step 3

    Place the apple slices in a microwave and oven safe bowl. Sprinkle over the cinnamon and five spice, then mix until all the apples are coated. Now grab the butter mixture and add it to the apples, making sure you use a rubber spatula to scrape out all that goodness. Mix everything together until the apples are well coated with everything. Cover the bowl with a microwave and oven-safe plate, then transfer to the microwave. Cook using the combination function (oven at 180°C/350°F and microwave power at 300 watts) for 15 minutes or until the apples are tender. Set aside in the fridge until completely cool.

  • Step 4

    Once your apple filling is cool, transfer it into a microwave and oven-safe pie dish and push down gently into an even layer. Take your shortcrust pastry and unroll it. Use a metal ruler and the tip of a sharp knife to cut it into 10 even strips, roughly 2cm wide.

  • Step 5

    Use a pastry brush to lightly coat the pie crust and latticework with the beaten egg.

  • Step 6

    Place the pie inside the microwave and cook using the Convection setting at 180°C (350°F) for 25 minutes, or until the apple filling is bubbling and the pie crust has a nice golden colour. Carefully remove the pie dish from the microwave and let it sit for 1 hour before slicing and serving with cream.
