The seasons have ticked over, and with the change in weather comes a change in our appetites. Once autumn arrives (Fall has officially landed here in Australia), it’s out with the summer salads and in with the soul-warming fare. While pasta recipes are always de rigeur, I’ve got the best autumn recipes to get you excited about the cooler months ahead. Full of comforting vibes and seasonal produce, these autumn food ideas will get you looking forward to cosy nights in, trust me.

What’s in season in autumn

Produce is rich and rewarding at this time of year. Creamy pumpkins and eggplants are at their best early in the season, as are mushrooms, zucchinis and broccoli. As for what fruit is in season in autumn, enjoy a bountiful harvest of apples, bananas, plums and nashi pears, to name a few.

 

As the months get cooler, reach for the cauliflower, Brussels sprouts, leeks, sweet potatoes, cabbage and more. There’s so much to enjoy, you’ll be spoilt for choice.

Autumn recipes to inspire you

With seasonal produce in mind, plus the cooler weather beckoning you indoors, here are some great recipes for autumn to try.

If you love Japanese food, this is the noodle bowl you need to be making. It’s all about that classic savoury broth, those chewy noodles and the beautifully glazed teriyaki chicken. Yes, it appears simple, but there’s nowhere to hide – each of those elements needs to be spot-on. Lucky for you, I’ve got all the know-how you need.

Chicken parmigiana is delicious at the best of times, but when it crosses paths with curry katsu, the result is all kinds of extra. An unexpected but delightful weeknight dinner to add to your autumn repertoire.

I love creamy gnocchi, but how about trying it with a Korean twist? A packet of store-bought fresh gnocchi, a few other ingredients (including your fave and mine, gochujang) and you have a super quick, extra tasty 10-minute dish that will surprise and delight you with its depth of flavour.

With a fair few steps, lamb biryani may seem like a journey of a recipe, but it’s one you’ll be glad to have embarked on once you taste the end result.

It’s pesto, but not as you know it. Here, the base of this version uses Chinese broccoli instead of the traditional basil, and the result is exceptional. As well as this Chinese broccoli pesto pasta recipe, try it as a dip, spread on toast or as a coating for chicken or fish.

Love comfort food but can’t decide what to make? This mash-up is the comforting collab of dreams: French onion ramen noodle soup.

Make clean-up a breeze with this easy cheat’s one-pot lasagne recipe that requires no oven time. Cook in the pan, then serve straight at the table – how’s that for simple?

Slow-cooker Chicken Laksa Noodle Soup

Chicken noodle soup gets a laksa glow-up with this warming, spicy slow cooker recipe. With its tender shredded chicken, slurpy noodles and creamy curry broth, it’s a rich-tasting treat. And did I mention… there’s dumplings, too!

Classic Butter Chicken

This is so creamy and delicious, cooks in under 30 minutes, and tastes just like it does in a restaurant. Or, let’s face it, even better than.

Sticky pork belly slices, sweet roasted apple and silky cabbage, nestled on a bed of perfectly steamed rice… this super bowl is full of serious flavour. Even better, it’s a one-pan, traybake recipe, so clean-up is a breeze.

I hadn’t heard of Chicken 65 before until you guys started requesting a recipe for it! And I’m so glad I did because this fiery dish is so incredibly delicious. Hot and spicy but tangy and crunchy, it’s a symphony of texture and flavour.

Make the most of autumn’s in-season leeks with this quick and easy teriyaki recipe.

Sweet Chilli Bacon Brussel Sprouts

Salted Caramel Sesame Cookies

Step 1

Preheat oven to 170°C (340°F). Line a large baking tray with some baking paper.

Step 2

Place the melted butter, brown sugar and white sugar into a large bowl and mix together. Crack in the egg, then add the vanilla bean paste, flour, baking powder and miso paste. Mix together with a wooden spoon until combined.

Step 3

Fold through the sesame snaps, sesame bar and caramel fudge pieces. Mix through half of the sea salt and all the white sesame seeds. Mix until evenly distributed.

Step 4

Using an ice-cream scoop, place scoops of cookie dough onto the lined tray, then use the back of a spoon to slightly flatten the tops. Sprinkle with the shichimi togarashi and remaining sea salt.

Step 5

Transfer tray to the oven and bake for 12–13 minutes or until the edges are crispy and golden but the cookie centre is still oozy. Now take a round cookie cutter and place over the cookie. Holding onto the cutter, make swooping circle motions so that the cookie’s edges smooth out. Allow to cool and set into their new shape… or give into temptation and eat them while still warm.

I like to use a mix of sugars in this dessert recipe. The soft brown sugar makes the cookies nice and chewy, while white sugar helps make them crispy. The perfect cookie texture is a combination of the two!

Shichimi togarashi is a Japanese spice blend that contains (among other things) sansho pepper, chilli powder, sesame seeds, nori and dried orange peel. It’s available from Asian supermarkets, although can often be found in the spice section of many supremarkets.

In Australia, you can buy sesame bars and sesame snaps from the supermarket. A popular brand is Eden Sesame Bar. Sesame snaps are a thinner version with more of a crispy consistency. A popular brand among Australians is Golden Days.

If you’ve never experienced the delicious-ness that is yum cha (aka dim sum), this is your sign! It’s a totally awesome and utterly unique restaurant dining experience. Yum cha cuisine is one of those things that’s designed to be eaten surrounded by family and friends. Think lots of little dishes like dumplings, meats, steamed buns and desserts all on the table ready to be shared and enjoyed. It’s a similar vibe to an Asian tapas, I guess! Regardless of how you want to describe it, it’s one of my favourite ways to eat out with loved ones. It got me thinking though… How can I get the same experience at home, but even easier? It was time to step into Marion’s Test Kitchen and figure out how to make yum cha recipes – just simpler. Enter the humble rice cooker…

Pork and prawn siu mai (or shumai) dumplings are a classic part of almost every yum cha or dim sum menu, and for good reason… they’re delicious! Even better, they don’t require any fancy folding technique, so they come together super quickly. Make sure you vigorously mix the filling to get the characteristic ‘bouncy’ siu mai texture, plus keep some of the prawns roughly chopped so you get little bursts of textured prawn-y goodness throughout.

For me, black bean pork ribs are a much-loved part of a yum cha or dim sum menu. Here, I’ve given them a softer, more tender texture than the typical Asian version by slow-cooking them, and I think they’re all the better for it. This set-and-forget rice cooker recipe is perfect served as part of a larger banquet if you want to impress your guests without spending all day in the kitchen!

Every yum cha banquet needs a steamed bun of some description. These spring onion ones have a savoury and fragrant filling, making them delicious in their own right, but even better dipped into sauces or used for mopping up flavours. Fresh and fluffy, they’re made in a rice cooker using the steam function, but you could absolutely cook them the traditional way instead if needed.

I love ordering chicken congee as part of a yum cha lunch – it’s a comforting and classic addition to the table. This version though is a total cheat’s version, as we’re reducing the cook time and all the stirring considerably (it’s all thanks to my unconventional ingredient choice!). Grab your rice cooker and rustle up this speedy porridge – there’ll be zero regrets. Serve as a delicious and filling breakfast or as part of your next homemade dim sum banquet.

Light and fluffy crepes, filled with whipped cream and tropical mango… what a dessert recipe! So simple, yet so delicate and divine. You could totally make these pancakes on the stovetop in a frying pan, but I like the way the rice cooker function gives them a gorgeously even colour all over and a gentle cook without all the work.
