The seasons have ticked over, and with the change in weather comes a change in our appetites. Once autumn arrives (Fall has officially landed here in Australia), it’s out with the summer salads and in with the soul-warming fare. While pasta recipes are always de rigeur, I’ve got the best autumn recipes to get you excited about the cooler months ahead. Full of comforting vibes and seasonal produce, these autumn food ideas will get you looking forward to cosy nights in, trust me.

What’s in season in autumn

Produce is rich and rewarding at this time of year. Creamy pumpkins and eggplants are at their best early in the season, as are mushrooms, zucchinis and broccoli. As for what fruit is in season in autumn, enjoy a bountiful harvest of apples, bananas, plums and nashi pears, to name a few.

 

As the months get cooler, reach for the cauliflower, Brussels sprouts, leeks, sweet potatoes, cabbage and more. There’s so much to enjoy, you’ll be spoilt for choice.

Autumn recipes to inspire you

With seasonal produce in mind, plus the cooler weather beckoning you indoors, here are some great recipes for autumn to try.

If you love Japanese food, this is the noodle bowl you need to be making. It’s all about that classic savoury broth, those chewy noodles and the beautifully glazed teriyaki chicken. Yes, it appears simple, but there’s nowhere to hide – each of those elements needs to be spot-on. Lucky for you, I’ve got all the know-how you need.

Chicken parmigiana is delicious at the best of times, but when it crosses paths with curry katsu, the result is all kinds of extra. An unexpected but delightful weeknight dinner to add to your autumn repertoire.

I love creamy gnocchi, but how about trying it with a Korean twist? A packet of store-bought fresh gnocchi, a few other ingredients (including your fave and mine, gochujang) and you have a super quick, extra tasty 10-minute dish that will surprise and delight you with its depth of flavour.

With a fair few steps, lamb biryani may seem like a journey of a recipe, but it’s one you’ll be glad to have embarked on once you taste the end result.

It’s pesto, but not as you know it. Here, the base of this version uses Chinese broccoli instead of the traditional basil, and the result is exceptional. As well as this Chinese broccoli pesto pasta recipe, try it as a dip, spread on toast or as a coating for chicken or fish.

Love comfort food but can’t decide what to make? This mash-up is the comforting collab of dreams: French onion ramen noodle soup.

Make clean-up a breeze with this easy cheat’s one-pot lasagne recipe that requires no oven time. Cook in the pan, then serve straight at the table – how’s that for simple?

Slow-cooker Chicken Laksa Noodle Soup

Chicken noodle soup gets a laksa glow-up with this warming, spicy slow cooker recipe. With its tender shredded chicken, slurpy noodles and creamy curry broth, it’s a rich-tasting treat. And did I mention… there’s dumplings, too!

Classic Butter Chicken

This is so creamy and delicious, cooks in under 30 minutes, and tastes just like it does in a restaurant. Or, let’s face it, even better than.

Sticky bbq pork rice bowl

Sticky pork belly slices, sweet roasted apple and silky cabbage, nestled on a bed of perfectly steamed rice… this super bowl is full of serious flavour. Even better, it’s a one-pan, traybake recipe, so clean-up is a breeze.

I hadn’t heard of Chicken 65 before until you guys started requesting a recipe for it! And I’m so glad I did because this fiery dish is so incredibly delicious. Hot and spicy but tangy and crunchy, it’s a symphony of texture and flavour.

Sweet Chilli Bacon Brussel Sprouts

This vegetarian curry is all the things – creamy, cheesy and SO good. This spinach and cheese classic is a must-try when you’re making your Indian feast at home. Even the paneer is made from scratch. An Indian recipe that’s set to impress!

The best way to eat your vegetables (and love them). These lightly spiced, crispy vegetable pakoras are the ultimate way to get rid of all your nearly limp, bottom-of-the-crisper veggies. Dunk them in the herby green chutney for the ultimate bite.

Just as Delicious: from concept to cookbook

The origin story for Just as Delicious is a simple one: I had so many recipes I wanted to share with you guys… and I ran out of room in my last cookbook! When I wrote Always Delicious (my first cookbook in YEARS), I set out to capture what you love most about my food and lifestyle channels: the tips, techniques and, most importantly, recipes that work. But it felt like only a small slice of the pie. And you can never have too much pie, amirite?

 

So here we are with Just as Delicious. Even more of the things you love, as well as the delightful details I believe make cooking and eating so joyful. Because for me, the point is not just what ends up on your plate. It’s about that smug little smile to yourself as you flip your flaky handmade roti in the pan. It’s about the soul-tingling joy in splashing foaming butter over the glorious crust of a thick-cut steak. And surely you’re doing a happy dance when that first piece of crispy fried chicken emerges from the hot oil. There is SO MUCH beauty in the process of cooking and that’s what I hope to share with you all.

Rice Cooker Beef Korma Curry

Step 1

Select the Cake/Bread function on the Panasonic rice cooker.

Step 2

Add the cumin seeds, coriander seeds and peppercorns to the dry rice cooker bowl and stir. Gently heat and toast for 1 minute to release the flavours and aromas, or until everything is smelling lovely and fragrant. Transfer to a mortar and use a pestle to grind to a fine powder, making sure you leave the rice cooker on.

Step 3

Place the ground spices into a large mixing bowl, then add the garam masala, turmeric, chilli powder, ginger, garlic, yoghurt and salt. Mix until well combined.

Step 4

Mix the beef through the marinade, making sure each piece is evenly coated. Stir through the green chilli. 

Step 5

Transfer the marinated beef and chilli to the rice cooker bowl. Select the Soup/Slow Cook function, close the lid and cook for 1 hour or until the beef is fork tender. Transfer to a serving plate. Top with extra green chilli and coriander sprigs. Serve with steamed rice or naan bread, if desired.

Notes:

– This ground chilli powder is made from Kashmiri chillies, a variety known for its lower heat rating and intense red colour. It’s widely used in Indian cuisine, especially in tandoori and butter chicken. It’s well worth seeking out online or at an Asian grocer to give this dish its colour and smoky flavour. Substitute regular chilli powder and a little sweet paprika if you can’t find this particular variety.

Have you been following our Make it Wednesday series? Whether you’re new to proceedings or are a seasoned regular, it’s sure to become your favourite time of the week. Because by the time that midweek mark rolls around and your “What’s for dinner?” well of inspo is starting to run dry, Marion’s got the goods. Yep, Wednesday is the day where she decides what you’re making for dinner. 

 

We’ve had quite the variety of dishes to date (Indian, Vietnamese, Japanese… we’ve done it all!) – and you guys are LOVING these recipes! So scroll down, take a peek and see what takes your fancy, then get ready to add some awesomeness to your meal rotation. Oh, and don’t forget you can even cook along with her by watching the cookalong videos, found below each week’s recipes. Hooray for sharing the mental load, we say!

Not your typical beef stroganoff, my weeknight recipe uses surprise Asian ingredients to pump up the volume on the savoury scale. And that steak? So tender and as far from tough and grey as you can get! Creamy, rich and comforting, serve this weeknight dinner with your pasta of choice.

How’s this for a bowl of comforting bliss: Cantonese-inspired BBQ char siu pork perched atop an epic fried rice packed with egg, savoury sauce and virtuous vegies. How to make this weeknight dinner even better? Get the PJs on, Netflix playing and phone on silent. Boom.

Considered real Japanese comfort food, Japanese-style curry is typically eaten as curry Katsu (a curry sauce with rice and either sliced, crumbed chicken or pork) but is excellent in a soup iteration for thick, chewy udon noodles, boosted with chicken mince and finished with a whole raft of fun and delish toppings.

Another midweek saviour, heading your way! I can’t believe how much flavour you can pack into beef mince, but this recipe really shows how vibrant and versatile this staple supermarket ingredient can be. This savoury mince is bursting with Indian spices and umami, plus the tender potato adds a lovely creaminess to proceedings too. I love serving this dish with delicately fragranced rice and some fresh flourishes at the end. All up, this is a wonderful weeknight option for the whole family to enjoy – as well as your tastebuds.

Aloo Keema & Cumin Rice

Step 1

For the cumin rice, heat the ghee in a medium saucepan over medium-high heat. Add the cumin seeds and black pepper; the seeds will sizzle. Quickly add the rice and 2½ cups of water, bring to the boil, then cover with a tight fitting lid. Reduce the heat to medium-low, then cook for 12-15 minutes or until the water is absorbed. Remove from the heat and stand for 8-10 minutes.

Step 2

Meanwhile, for the aloo keema, heat the oil in a large non-stick wok or saucepan over medium-high heat. Add the beef mince, using a wooden spoon to break the beef up, and spread the meat out so it has as much contact with the hot pan as possible. Leave it to sear for 4–5 minutes until the meat develops a deep golden colour.  Flip the mince, then continue to cook until the beef is almost cooked and all the excess water has evaporated. Add the onion, garlic, ginger and a generous pinch of salt. Stir to combine, and cook for a minute until onions are beginning to soften.

Step 3

Add the cardamom pods, cumin seeds and cinnamon and give everything a good mix. Now add the chilli powder (if using), ground coriander, turmeric and garam masala. Reduce the heat to medium, then cook, stirring constantly so the mixture doesn’t catch on the base of the pan, for 3-4 minutes or until very fragrant

Step 4

Add the tomato paste, chopped tomato, potato wedges and ½ cup water to the pan. Cover and cook for 10 minutes, stirring occasionally, or until the potatoes are nearly tender. Remove the lid, increase the heat to medium-high, then cook, stirring, for about 8 minutes or until the excess liquid has evaporated, the potatoes are tender but still holding their shape, and you can see the oil start to separate out.

Step 5

Place the onion, lime wedges, herbs and chilli on a small plate. Serve alongside the aloo keema, cumin rice and natural yoghurt.

Aloo keema

I made aloo keema with plant based mince from beyond burger. It turned out so delicious and the right amount of spiciness. I also made the JEERA basmati in instant pot and again was the winner. My husband and daughter were very impressed. Thank you for this amazing recipe. Will look out for more in your website.

Yummy + a bit spicy!

Easy to make and super tasty! Even though I didn’t have all the ingredients, it turned out really well. Garam masala was dominant in my version 🙂
