Meatball Sub Bao Buns

Step 1

To make the bao buns, empty the bao mix into a large bowl. Make a well in the centre and pour in water and oil according to packet instructions, then mix until the dough starts to come together. Lightly grease your work surface with oil, empty mixture onto your bench and knead for 5 minutes until smooth. Shape into a ball, then transfer to a clean bowl. Cover bowl with cling film and set aside for 90 minutes to proof.

Step 2

Meanwhile, preheat the oven to 160°C (320°F). To make the meatballs, combine the ingredients in a large bowl. Mix until just combined, as overmixing will result in a tougher texture. Form mixture into meatballs a little smaller than a golf ball. Place the meatballs onto a tray lined with baking paper. Bake in the preheated oven for 20 minutes or until lightly golden.

Step 3

For the miso tomato sauce, heat the olive oil in a saucepan over medium-high heat. Add the garlic and cook for a minute until fragrant. Add the bay leaf, star anise and dried chilli. Then add the whole peeled tomatoes, including the juices. Break up the tomatoes a little with a wooden spoon. Add the tomato paste, miso paste and soy sauce. Mix, then simmer uncovered for 30-40 minutes, stirring every so often (if the sauce starts to thicken too much, add a little water).

Step 4

Let’s get back to the dough. Once it’s risen, knead the dough for another 5 minutes, then divide the dough into 6 even portions. Next, divide each of the 6 portions in half again so you have 12 in total, then roll each out into a sausage-like shape. Cross over 2 logs at their centre, then braid each end over one another, and tuck the edges under. Transfer to a tray lined with baking paper, then repeat with remaining dough to create 6 braided subs. Allow to rest for a final 15 minutes.

Step 5

Place in a steamer basket and cook for 10-12 mins, or until light, fluffy and cooked through.

Step 6

Remove and discard the bay leaf, star anise and dried chilli from the miso tomato sauce. Carefully transfer the cooked meatballs into the tomato sauce and gently mix – those meatballs will be very tender! Add the parsley and carefully mix again. Set aside for later.

Step 7

Butterfly the baguette baos in half without cutting all the way through, then open up and place the saucy meatballs inside. Top with a little extra sauce, plenty of parmesan cheese and some extra chopped parsley.

Step 1

Preheat a fan-forced oven to 170°C (340°F).

Step 2

In a large mixing bowl, combine the beef mince, breadcrumbs, egg, curry paste, onion and a good pinch of both salt and pepper. Using your hands, mix all ingredients until well incorporated, then form into golf-ball-sized meatballs. Transfer meatballs to a baking tray lined with baking paper, then transfer to the preheated oven and cook for 15 minutes.

Step 3

Meanwhile, to make the curry sauce, place a frying pan over medium-high heat. Add the vegetable oil and massaman curry paste and saute the paste for 1-2 minutes until lovely and fragrant. Now add the coconut cream and ½ cup of water and cook for 5 minutes until heated through. Reduce heat to low.

Step 4

Once the meatballs are cooked through in the oven, transfer them to the massaman curry sauce. Stir gently until they are evenly coated, then continue cooking for a further 5 minutes until the sauce has thickened slightly.

Step 5

Transfer to serving plates, then sprinkle with sliced red chilli and coriander. Serve with crusty baguette.

Ingredients

2 tbsp vegetable oil

500g (1 lb) pre-made mini meatballs

1 onion, sliced

1 capsicum (bell pepper), cut into bite-sized pieces

1 cup diced fresh pineapple

4 spring onions (scallions), trimmed, green and white parts cut into 3cm (just over 1”) batons

steamed rice, to serve

 

Sweet & sour sauce:

½ cup brown sugar

3 tbsp white vinegar

2 tbsp tomato ketchup

1 tbsp light soy sauce

1/3 cup pineapple juice

¼ tsp Chinese five spice

2 tsp cornflour (cornstarch), mixed with 2 tbsp water

Steps
Step 1

To make the sweet & sour sauce, place the brown sugar, vinegar, tomato ketchup, soy sauce, pineapple juice and Chinese five spice in a saucepan over medium-high heat. Simmer for 5 minutes or until the sugar has dissolved. Add cornflour mixture to the sauce and simmer for a further 2 minutes to thicken. Remove from heat and set aside.

Step 2

Heat a clean wok or large frying pan over high heat. Add the oil and the meatballs and cook, turning every so often, for 4-5 minutes or until almost cooked through. Add the onion and stir-fry for another 2 minutes. Add the capsicum and stir-fry for another minute. Then add the pineapple and the sweet & sour sauce. Stir-fry until well combined. Remove from heat and toss through the spring onion. Serve with steamed rice.

Simple yet amazing

I have made this several times, I do cut the sugar down a bit, and on occasion I will add broccoli and carrots it’s always so good and I get lost of compliments on it when I make it. Do use the low sodium soy sauce or it might be too salty. I made that mistake the first time, 100% my fault

OMG

OMG what a delicious meal. So good in fact, I’m going to cook it again and invite guests over. My mokos (grandchildren) will absolutely love it. It’s quick, tasty and easy as. I’m also going to get super organised making and preserving the sauce…would make nice Xmas gifts. Thanks Marion!

SAN CHOY BOW MEATBALL LETTUCE CUPS

Ingredients

 1 x Marion’s Kitchen San Choy Bow Kit, which includes: 

– VERMICELLI NOODLES

– SAN CHOY BOW SAUCE 

– WATER CHESTNUTS 

– CRUSHED PEANUTS 

2 tbsp vegetable oil 

herbs, to serve (e.g. mint and coriander) 

slice cucumber, to serve 

sliced chillies, to serve 

lettuce leaves, to serve 

 

Meatballs: 

½ cup panko breadcrumbs 

¼ cup milk 

500g (1 lb) pork mince 

¼ cup finely sliced spring onion (scallions) 

2 garlic cloves, finely grated or minced 

1 tsp sea salt 

Steps
Step 1

For the meatballs, place the breadcrumbs and the milk into a small bowl. Mix and allow to soak for a minute until softened. 

Step 2

When the breadcrumbs are soft and mushy, place them in a large bowl along with the remaining meatball ingredients. Open up the WATER CHESTNUT sachet from the kit and pour the contents into a fine sieve to drain away the liquid. Add the water chestnuts to the meatball mixture. Mix until well combined. 

 

Step 3

Heat the vegetable oil in a large non-stick wok or frying pan over high heat. Wet your hands (this helps the mixture from sticking to your fingers) and roll small meatballs and add them straight into the hot pan as you go. Allow to sear for 2-3 minutes before turning and searing on the other side for another 2 minutes. 

Step 4

Pour in the SAN CHOY BOW SAUCE and mix well. Allow to simmer for 4-5 minutes or until the sauce thickens slightly and the meatballs are cooked through. 

Step 5

In the meantime, cook the VERMICELLI NOODLES. Soak them in hot water for 3 minutes or until just softened. Drain and rinse under tap water to stop them cooking any further. Drain again and use scissors to cut the noodles into a more manageable length. Transfer noodles to a serving plate. 

Step 6

Once your meatballs are cooked, sprinkle over the CRUSHED PEANUTS and transfer the meatballs to a serving plate. Serve family-style with loads of fresh herbs, sliced cucumber, sliced chillies and lettuce to wrap everything up.

Ingredients

1 tbsp raw glutinous rice (also known as sticky rice)* 

1 tbsp palm sugar 

3 tbsp fish sauce 

2 tbsp lime juice 

3 tsp chilli powder (or to taste) 

500g (1 lb) pork mince 

2 small red Asian shallots, finely chopped 

1/4 cup mint leaves, finely chopped, plus extra leaves for serving 

1/4 cup finely chopped coriander (cilantro) 

1/4 cup finely sliced spring onions (scallions)

vegetable oil for deep frying 

cucumber slices, to serve 

Steps
Step 1

Toast the rice in a dry frying pan over high heat until golden brown. Use a mortar and pestle to ground the toasted grains to a fine powder. 

Step 2

To make a seasoning/dipping sauce, in a small bowl, mix half the rice powder with the palm sugar, fish sauce, lime juice and chilli powder. Set aside for later. 

Step 3

In a large bowl, add the pork mince, shallot, mint, coriander, spring onion and the remainder of the rice powder. Add three-quarters of the spicy seasoning sauce you made earlier (reserve the remainder and serve as a dipping sauce). Mix well and form into small bite-sized meatballs. 

Step 4

Fill a wok or saucepan about one-third full with oil. When the oil is hot, add the meatballs in batches and cook for about 3 minutes or until golden and cooked through. Drain on paper towel. Serve warm with extra mint leaves, cucumber and the reserved dipping sauce.

– Using glutinous or sticky rice will give you a softer rice powder. If glutinous rice is
unavailable you can still use regular long grain rice to add a similar toasty flavour with a slightly crunchier texture

Marion’s Best Spaghetti Meatballs

I’m calling it: these meatballs are the bomb! Packed full of flavour, yet still so soft and tender, they’re the perfect companion to my epic tomato sauce and a bowl of freshly cooked spaghetti. All together now… yum!

MARION’S BEST SPAGHETTI MEATBALLS

Ingredients

500g (1.1 lb) dried spaghetti

extra virgin olive oil, for drizzling

finely grated parmesan cheese, to serve

 

Miso tomato sauce:

3 tbsp extra virgin olive oil

4 garlic cloves, sliced

2 x 400g/14 oz cans whole peeled tomatoes

2 tbsp tomato paste

2 tbsp miso paste

1 bay leaf

2 star anise

1 dried chilli

3 tbsp soy sauce

 

Meatballs:

½ cup panko breadcrumbs

3 tbsp milk

100g (3.5 oz) ricotta

½ cup finely grated parmesan cheese

1 egg

2 garlic cloves, finely grated

500g (1.1 lb) beef mince

200g (7 oz) pork mince

1 tsp fennel seeds

½ tsp freshly grated nutmeg

2 tbsp finely chopped parsley

2 tsp sea salt

finely grated zest of 1 lemon

Steps
Step 1

Preheat oven to 180°C/356°F.

Step 2

For the miso tomato sauce, heat the olive oil in a saucepan over medium-high heat.  Add the garlic and cook for a minute. Then add the whole peeled tomatoes, including the juices. Break up the tomatoes a little with a wooden spoon. Add the tomato paste, miso paste, bay leaf, star anise, dried chilli and soy sauce. Mix, then simmer uncovered for 30-40 minutes, stirring every so often (if the sauce starts to thicken too much, add a little water).

Step 3

For the meatballs, combine the panko breadcrumbs with the milk. Set aside for 2-3 minutes.

Step 4

In the meantime, line a baking tray with baking paper. Place all the other meatball ingredients in a large bowl. Then add the softened breadcrumbs. Mix until well combined. Form into meatballs a little larger than a golf ball. Place the meatballs onto the lined tray. Bake in the preheated oven for 20 minutes or until golden.

Step 5

When the tomato sauce is done simmering, remove the star anise, bay leaf and dried chilli.

Step 6

Place the meatballs into a large, deep frying pan. Pour over the tomato sauce. Cover and simmer for a further 10 minutes.

Step 7

In the meantime, cook the spaghetti in plenty of salted boiling water. Reserve 1 cup of pasta cooking liquid. Drain the pasta and place it back in the pot. Add 3-4 large spoonfuls of the tomato sauce. Add a quarter cup of the pasta cooking liquid and drizzle with olive oil. Mix over a medium-high heat until thick and glossy (add more pasta cooking water if the sauce looks too dry). Divide among serving bowls and top with the remaining tomato sauce and meatballs.

Step 8

Drizzle with more olive oil and top with parmesan chees

Step 1

For the quick-pickle carrots, combine ingredients in a bowl and set aside, stirring occasionally, for about 10 minutes. Use your hands to squeeze the liquid from the chillies and carrot. Discard the liquid and set the vegetables aside for later. 

Step 2

To make the pork balls, combine the breadcrumbs and milk in a large bowl. Allow to hydrate for 2-3 minutes. Then add the remaining meatball ingredients. Mix until combined. 

Step 3

Heat oil in large non-stick frying pan over medium heat. Roll walnut-sized meatballs and add them straight into the pan. Cook the meatballs (in batches if necessary), turning, for 5 minutes or until evenly browned and cooked through. 

Step 4

Serve the meatballs with the quick-pickle carrots and lettuce leaves. Drizzle mayonnaise and Coconut Sriracha as desired. Top with coriander leaves if using.

Ingredients

1 tbsp vegetable oil

5cm (2 inch) piece ginger, peeled, finely julienned

1 bottle Marion’s Kitchen Honey Soy Garlic Marinade (go to where to buy to find a store)*

small cabbage leaves, to serve

1 cucumber, finely sliced

coriander (cilantro) leaves, to serve

 

Meatballs:

½ cup panko breadcrumbs

¼ cup chicken stock

500g (1 lb) pork mince

¼ cup finely sliced spring onion (scallions)

2 garlic cloves, finely grated or minced

1 tsp sesame oil

1 tsp sea salt

Steps
Step 1

For the meatballs, place the breadcrumbs and a ¼ cup of the chicken stock into a small bowl. Mix and allow to soak for a minute until softened.

Step 2

In the meantime, place remaining meatball ingredients in a large bowl along with 3 tablespoons of the Honey Soy Garlic Marinade. Add the softened breadcrumbs and mix until just combined. Try not to over mix, as the more you mix the tougher the meatballs will become. Roll into golf ball-sized meatballs.

Step 3

Heat the vegetable oil in a large non-stick frying pan over medium-high heat. Add the meatballs and cook, turning occasionally, for 3-4 minutes or until golden brown (but not quite cooked through). Transfer meatballs to a plate and set aside for later.

Step 4

Add the ginger straight into the same pan and cook for 2 minutes. Then add the meatballs back into the pan and pour over the remaining bottle of the Honey Soy Garlic Marinade. Turn the heat down to medium and cover with a lid. Cook for 3-4 minutes or until the meatballs are cooked through. Remove from heat.

Step 5

Top the cabbages leaves with cucumber and then top with meatballs and sauce. Scatter over coriander leaves and serve.

LION’S HEAD MEATBALLS

Ingredients

400g (14 oz) beef mince

150g (5 oz) pork mince

2 tbsp finely chopped ginger

2 garlic cloves, finely grated

¼ cup finely chopped coriander, plus extra to serve

2 tbsp soy sauce

2 tbsp Chinese Shaoxing cooking wine

2 tbsp beef stock

1 egg

1 tsp sea salt

1 tsp sugar

Steps
Step 1

Mix the beef and pork mince vigorously. Take small handfuls of the mixture and slap them against the side of the bowl. Then add the remaining ingredients and mix well.

Step 2

Take 2 heaped tablespoons of the mixture and roll it into a meatball shape. Repeat until the mixture is finished. Place the meatballs onto a large plate that will fit inside a large deep-sided pan with a lid. You might need to do two plates and steam them one after the other if your meatballs won’t all fit on the one plate.

Step 3

Fill the pan halfway full with water and set it over high heat. Use a large piece of foil to form a coil that is just higher than the water level. When the water starts to steam, place the plate onto top of the foil trivet. Cover with a lid and steam for 8-10 minutes or until the meatballs are cooked through. Garnish with extra coriander leaves and serve.

Notes:

– You can serve this as a shared starter or part of a Chinese banquet-style dinner.

– To test if the meatballs are cooked, insert a metal skewer into the centre of a meatball for a couple of seconds and then touch it to your top lip. If the skewer is warm, the meatball is cooked through.

SPICY MEATBALL BANH MI

Ingredients

1 tbsp vegetable oil

4 long crusty bread rolls

pork pate to serve (optional)

slices pork luncheon to serve (optional)

Kewpie mayonnaise* to serve

Coconut Sriracha (find out where to buy here) to serve

Coriander leaves to serve

 

Quick-pickle carrots:

1 carrot, cut into matchsticks

1 long red chilli, sliced

¼ cup rice vinegar

¼ cup sugar

 

Meatballs:

500g (1 lb) pork mince

1 lemongrass stalk, pale part only, bruised and finely chopped

3 garlic cloves, finely grated

4 spring onions, white and green parts finely chopped

1 tbsp fish sauce

2 tbsp (or to taste) Coconut Sriracha

1 tsp sugar

1 tsp sea salt

Steps
Step 1

For the quick-pickle carrots, combine ingredients in a bowl and set aside, stirring occasionally, for 20 minutes. Any extra can be kept in the fridge for up to 2 weeks.

Step 2

To make the pork balls, combine the ingredients in a large bowl. Mix vigorously. Shape into walnut-sized meatballs.

Step 3

Heat oil in large non-stick frying pan over medium heat. Cook meatballs (in batches if necessary), turning, for 5 minutes or until evenly browned and cooked through.

Step 4

Split bread rolls lengthwise, without cutting all the way through. Generously spread with pate. Top with slices of luncheon, meatballs, pickled carrot, drizzle with mayonnaise, Coconut Sriracha and coriander.

Japanese Glazed Meatballs & Soba Noodles

JAPANESE GLAZED MEATBALLS & SOBA NOODLES

Ingredients

1 cucumber, thinly sliced

½ tsp sea salt

1 tbsp vegetable oil

270g (9.5 oz) dried soba noodles

3 tbsp soy sauce

2 tbsp honey

2 tbsp sesame oil

2 tbsp thinly sliced pickled ginger

3 tbsp finely slice spring onions (scallions)

8 bamboo skewers, soaked in water for at least 10 minutes

1 bottle Marion’s Kitchen Classic Japanese Teriyaki Marinade (go to where to buy to find a store or make the homemade version here)

 

Meatballs:

½ cup panko breadcrumbs*

1/3 cup chicken stock

300g (10.5 oz) chicken mince

1 skinless chicken thigh, finely minced by hand

¼ cup finely sliced spring onion (scallions)

3 shiso leaves*, finely sliced

1 tbsp miso (red or white is fine to use)

Steps
Step 1

Combine the cucumber and salt in a large bowl. Set aside for at least 15 minutes to allow the salt to slightly pickle the cucumber.

Step 2

For the meatballs, combine the panko breadcrumbs and the chicken stock in a small bowl. Set aside for 2-3 minutes to soften. Then mix the softened breadcrumbs with the remaining meatball ingredients. Shape walnut-sized amounts of the mixture into rough balls and thread two meatballs onto each bamboo skewer. Set aside in the fridge until ready to cook.

Step 3

To prepare the soba noodles, heat a large pot of water over high heat until boiling. Have a large bowl of iced water ready to the side. Drop the noodles into the boiling water and cook according to packet instructions. As soon as the noodles are al dente, drain and transfer to the bowl of iced water. Soak in the iced water until ready to serve.

Step 4

To cook the meatball skewers, heat the vegetable oil in a large non-stick frying pan over medium-high heat. Add the skewers (do this in batches if you need) and sear both sides for 1-2 minutes or until golden brown. Then brush the meatballs liberally with the Classic Japanese Teriyaki Marinade. Continue to flip and brush the meatballs with the marinade for another 3-4 minutes or until the meatballs are cooked through and a sticky glaze has developed. Remove from heat.

Step 5

Finish the soba noodle salad by draining and squeezing the liquid out of the cucumbers. Place them in a large bowl. Drain the noodles and add those to the bowl along with the soy sauce, honey, sesame oil, pickled ginger and spring onions. Toss until well combined. Serve the glazed meatball skewers with the soba noodles.

Notes:

– Panko breadcrumbs are a type of Japanese breadcrumb.

– Shiso or perilla leaves can be found in an Asian/Japanese supermarket. They have a beautiful herbaceous, minty, basil-like flavour. If unavailable, you can simply leave them out or add a couple of tablespoons each of finely sliced mint and basil.
