How to use an air fryer like a BOSS

Whether you’re an air fryer noob or a long-time devotee, there’s no denying the popularity of this much-loved kitchen appliance. Convenient, speedy and with none of the deep-frying faff, it’s become a must in many people’s kitchen toolkit. But how to use an air fryer in the BEST way? There’s a knack to it, for sure. 

 

Read on for handy air frying tips and tricks you need to get the best out of your new BFF, as well as all your often-asked questions. 

What is air frying? And how does it work?

Firstly, the name is a little confusing because air fryers don’t actually ‘fry’ your food in the conventional sense. The bulky top part of the appliance contains a heating mechanism and a fan, which pushes the heat down and around the food sitting in the basket. The hot air circulating around the food is what cooks it and makes it crisp, without the oil. So basically it’s like a super-charged, compact convection oven that sits on your kitchen benchtop.

Is it a fad? What are the benefits?

Air frying has had a huge surge in popularity over the last few years, and it can seem like a bit of an internet craze. But there’s some serious substance behind the benefits. 


These devices have been designed to make things crispy without needing to deep-fry with a whole lot of oil. Using less oil (although we do recommend spraying your basket and food with a small amount of oil) obviously makes dinner a little more virtuous. It’s also less messy (say goodbye to benchtop splatter), plus there’s no worries about wondering how to dispose of your cooking oil. 


Using the relatively small basket instead of large baking or roasting trays is great for reducing the cleanup, too. However, for the best results, you’ll want to avoid overcrowding, so you may need to cook your food in batches.

What can I air fry?

Honestly, a better question would be what CAN’T you – almost everything you could put in a standard oven can be chucked in the air fryer instead. Think ultra-crispy spuds, broccolini, zucchini, even asparagus – the world is your oyster. Meat works well too, as do plant-based proteins like tofu and tempeh. You can even hard boil an egg in there (yes, seriously!) and bake – the general rule of thumb is that if your cake tin fits, you can bake a cake in there, too. Versatile, right?

In terms of things not recommended, anything with wet batter won’t fare too well. Whole roasts CAN be done but it will require some extra TLC (see tip #7 below for some meat-cooking tips). Check out my Cheeseburger Spring Rolls and Lemon Chicken to get you started…

Tip for how to use an air fryer

We’ve come up with the best tips, tricks and hacks.

1. Less is more when it comes to oil

The beauty of air frying is that you get deep-fried crispiness minus all the excess oil. While you do still need to use a small amount of oil to get maximum crispiness, it really is a less-is-more situation. The other thing to be aware of is to use an oil with a higher smoke point – try to steer clear of olive oil and stick to vegetable, canola, rice bran or even peanut for best results. 

 

If crispy is what you’re looking for, you can lightly spray the contents of your air fryer halfway through the cooking time for that extra crunch!

2. Grease your basket

No-one wants to be prying their food off the bottom of their air-fryer basket, so greasing your basket – especially for foods prone to sticking – is super important.

3. Avoid overcrowding

This one is vital if you’re after signature crispiness. Avoid overcrowding food, as it prevents the circulation of hot air. Instead, try to leave lots of room around the ingredients so that the hot air can circulate evenly and things get golden and crunchy.

4. Shake it

One of the best tips I can offer you for how to use an air fryer is to periodically shake the basket during its cooking time. I’m not talking anything crazy – just a couple of good shakes during cooking to really move the food around and get that even, crispy coating on every single bite. Remove the basket before shaking – just shake the basket, not the whole machine! You could also try turning your food over halfway through the cook to promote more even browning. 

5. Clean it! Please!

Another blessing is that these mini marvels are super easy to clean – and c’mon, who doesn’t love that? For best results though, you want to make sure you’re cleaning it after every use. A quick wipe out to rid the basket of any extra debris and oil is enough. It’ll save you time and extend the life of your appliance in the long run.

6. Cooking times vary

Cooking times can vary pretty drastically, and things that may take 15-20 minutes in the oven take far less time in the air fryer. In order to not burn your dinner, I recommend always checking on your contents sooner rather than later. 

 

Removing the basket has no impact on crunch, nor cooking time, so don’t forget to have a peek to ensure things are cooking evenly and not too quickly.

7. Invest in a thermometer

If you’re going to be using your air fryer to cook meat, testing the internal temperature is vital. Because of the air fryer’s super-speedy nature, meat can look perfectly crispy on the outside and still be undercooked on the inside. Save yourself from cutting into your meat every time you need to check if it’s done and invest in a meat thermometer. You wont regret it – promise! 8. Got leftovers?

If you’re a leftover lover, an air fryer is ideal to heat things through thoroughly and quickly without having to use your large standard oven, so it’s a more cost- and time-effective appliance. That next-day pizza will be ultra crispy and tasting just as delish as the day you ordered it in no time.

Step 1

To make the tangy bbq sauce, place all of the ingredients into a small saucepan over medium heat. Whisk to combine and bring to a gentle simmer until the sugar has dissolved. Remove from heat and allow to cool.

Step 2

For the curry seasoning, mix the ingredients in a small bowl. Set aside.

Step 3

Add the plain flour, rice flour, potato starch and baking powder to a large bowl and whisk well to combine.

Step 4

In another bowl, add the chicken pieces, egg, salt and pepper, then mix well to combine.

Step 5

Add the chicken mixture into the flour mixture. Using your hands, mix and squeeze the coating into the chicken until each piece is evenly coated.

Step 6

Spray the basket of an air-fryer with oil. Place the chicken nuggets into the basket, being sure not to overcrowd them (you may need to cook them in batches). Cook at 180°C (350°F) or on high for 5 minutes. Turn the pieces over and spray again with oil, then cook for another 5–10 minutes or until cooked through. Transfer to a large bowl and repeat with the remaining chicken nuggets.

Step 7

Sprinkle the curry seasoning over the nuggets and toss to combine. Serve the nuggets with the tangy BBQ sauce.

Step 1

For the pork marinade, combine ingredients in a large bowl and whisk to combine well. Add the pork ribs, toss to coat, then cover the bowl. Refrigerate for at least 1 hour to allow flavours to develop.

Step 2

Place the barbecue sauce, honey, ½ cup of water, brown sugar, rice wine vinegar, Shaoxing wine, soy sauce, dark soy sauce and coffee in a wok or large frying pan over medium-high heat. Bring to a simmer, then turn the heat to low and cook for around 5 minutes or until it’s thickened slightly (you want it to be sort of like a thin syrup texture). Turn the heat off and set aside until your ribs are cooked.

Step 3

Place the ribs in the bowl of an air-fryer making sure they’re well spaced (do this in batches if you need to). Cook at 180°C (350°F) for 10 minutes*.

Step 4

Transfer the ribs to the pan with the sauce. Turn the heat back on to high and cook, tossing, for 3-4 minutes or until the ribs are well coated and the sauce has thickened. Transfer to a serving place and sprinkle over the sesame seeds, chilli and coriander.

Notes:

– If you don’t have an air fryer, you could deep-fry the ribs instead. Fill a wok or heavy based saucepan with one-third of vegetable oil and place over high heat. Once the oil is hot enough (180°C/350°F, or when a wooden spoon dipped in forms small bubbles), drain the ribs of any excess marinade, then carefully lower into the hot oil (you’ll probably need to do this in two batches). Cook for 4-5 minutes or until golden and cooked through. Drain on a tray lined with kitchen towel, then repeat with the remaining ribs. Now you can head back to step 4!

Finger lickin good

So easy to prepare and make in an air fryer – just ten minutes of cooking time per batch! However, due to the quick cooking method the ribs are still a bit tough and some thicker pieces of ribs may not be fully cooked through. Smaller pieces turn out better.

The sauce was the best part, so delicious: savoury, sweet and a bit smoky. I would make this again, the sauce, but need to find a way to make it more tender, perhaps parboiling??

Air Fryer Buffalo Chicken Wings

Buffalo chicken wings… in an air fryer? Yep, we’re making Marion Grasby’s easy crispy chicken appetiser with an Asian twist in minutes.

Step 2

Cut wings in half between the wingette drumette. Place chicken onto a tray with some paper towel and generously sprinkle with salt. Leave for 5 minutes to draw out excess moisture.

Step 3

Meanwhile, for the ranch dressing, place mayonnaise, sour cream, buttermilk, spring onion, parsley, salt and pepper in a bowl. Mix to combine. Now add lemon juice and garlic and stir again until incorporated. Cover and leave in the fridge until ready to serve.

Step 4

Pat the chicken pieces dry with more paper towel. Spray the basket of your air fryer with oil. Place the wings in the basket in one layer, leaving a little room between each one for the air to circulate (do batches if necessary). Spray the tops of the wings with a little more oil. Cook wings at 200C/390F for 10 minutes. Open the air fryer and turn wings over and cook for a further 10-15 minutes.

Step 5

In the meantime, let’s make the spicy buffalo sauce. In a separate large bowl, add the gochujang and the barbecue sauce, then whisk together. Next, in a small saucepan, melt the butter over a gentle heat, then add to the gochujang mixture. Whisk until well combined. At first, the butter will sit on top of the gochujang and bbq sauce, so you need to mix them together very well. Leave on the bench ready for the hot wings.

Step 6

Once chicken is cooked and super crispy and golden, remove the basket from the air fryer. Using tongs, transfer wing pieces straight into the buffalo sauce. Generously coat all of the wings and serve with ranch dressing on the side.

– Gochujang is a Korean fermented chili paste. It can be found in the Asian aisle at most supermarkets or order it online.

Ingredients

500g (1 lb) piece pork belly
sea salt, to season
2 tsp Chinese Shaoxing wine
2 tsp Chinese five spice powder

Steps
Step 1

Use a ruler and a Stanley knife to score the pork belly at 1⁄2-cm (3/16”) intervals. Then go back and score again in the opposite direction to form a cross-hatch or diamond pattern. Generously season the skin side of the pork with salt and rub the salt into the score marks.

Step 2

Flip the pork over so it is meat-side facing up. Rub the Chinese Shaoxing wine and five spice onto the meat (try to keep the marinade away from the skin, which we want to keep as dry as possible). Flip the pork over and transfer to a large tray. Refrigerate uncovered overnight to allow the salt to draw out moisture from the skin.

Step 3

Transfer the pork belly to a cutting board and pat the skin dry with paper towel. Take a sheet of foil and place it under the pork belly. Fold the foil up around the pork belly so that it covers all sides of the meat (leaving the top skin exposed). Place the pork belly in the air fryer basket. Cook at 120C/250F for 30 minutes.

Step 4

Take the pork belly out of the air fryer and remove the foil. Pat the skin dry with paper towel. Place the pork belly back into the air-fryer and cook at 200C/390F for 10 minutes.

Step 5

Remove the pork belly from the air fryer and rest for 10 minutes. Cut the pork belly into squares or slices and serve with your choice of sides and/or dipping sauce.

AIR FRYER CHEESEBURGER SPRING ROLLS

Ingredients

10 large spring roll wrappers

vegetable oil spray

¼ cup tomato ketchup

¼ cup Marion’s Kitchen Coconut Sriracha (click here for where to buy, or substitute with any chilli or spicy sauce)

Filling:

250g (9 oz) beef mince

¼ onion, finely diced

¼ cup burger pickles, finely diced, plus extra whole slices to serve

1 tbsp Dijon mustard

2 tsp sea salt

10 Swiss cheese slices

Spring roll glue:

1 tbsp plain (all-purpose) flour 

1 tbsp water

Steps
Step 1

For the filling, place the beef mince, onion, diced pickles, mustard and salt in a large bowl. Mix gently until just combined (don’t over mix it or your filling will be too tough and solid). Roll into 10 small sausage shapes and wrap each in a slice of cheese.

Step 2

Make the spring roll glue by mixing the flour and water together to form a thick paste.

Step 3

Fold the spring roll wrappers like an envelope around the burger ‘sausages’ and roll up, sealing with the spring roll glue. Repeat with remaining filling and wrappers.

Step 4

Place about 8 spring rolls into the basket of the air fryer. Spray with oil. Cook for 10 minutes and then turn the spring rolls over. Spray with more oil if desired. Cook for another 10 minutes or until golden and cooked through.

Step 5

In the meantime, make the dipping sauce by combining the ketchup and the Coconut Sriracha. Serve with extra pickles.

Ingredients

500g (1 lb) chicken breast fillets, cut into 3cm (just over 1”) pieces

1 tbsp light soy sauce

1 tsp sesame oil

1/3 cup plain (all-purpose) flour 

1 egg, lightly whisked

oil spray

spring onion (scallions), thinly sliced, to serve

 

Lemon sauce

2 tsp peanut oil

1 tbsp julienned fresh ginger

2 garlic cloves, finely chopped

1/2 cup chicken stock

1/4 cup fresh lemon juice 

1/4 cup caster (granulated) sugar

1 tbsp Shaoxing wine

1 tbsp light soy sauce 

3 tsp cornflour (cornstarch), mixed with 1 tbsp water

Steps
Step 1

Place the chicken in a bowl with the soy sauce and sesame oil. Stir to combine and set aside.

Step 2

Meanwhile, make the lemon sauce. Heat the oil in a small saucepan over medium heat. Add the ginger and garlic and cook, stirring, for 1 minute or until aromatic. Add the stock, lemon juice, sugar, wine and soy sauce. Simmer for 5 minutes. Add cornflour mixture and simmer, stirring, for 2 minutes or until thickened. Cover and set aside.

Step 3

Place the flour and the egg in separate shallow bowls. Working in batches, toss the chicken in the flour, then in the egg and back in the flour to coat. 

Step 4

Spray an air fryer with oil. Add half of the chicken and spray well with oil. Heat the air fryer to 180°C/350°F. Cook, turning halfway and respraying with oil, for 10 minutes or until cooked through. Transfer to a bowl. Repeat with the remaining chicken. 

Step 5

Reheat the sauce if necessary. Drizzle the sauce over the chicken and toss until well combined. Sprinkle with spring onion and serve.

Great recipes as always ! With my twist.

I’m gluten free so I used cornflour.

I added some red chilli and garlic to the chicken marinade. And sweet soy sauce instead. I ditched the egg and just added my chicken to the cornflour and pressed it on. Worked really well !!

This is good

I changed a lot. But to be fair, I am a chef and have my ways about some things. I liked the lemon sauce which is why I came here. It turned out a little hot (I added cayenne pepper) but it was tasty and I tripled the sauce because I like my chicken and rice more saucy.

Crispy Air Fryer Lemongrass Chicken

So this is what happened when I bought my first air fryer! I’d never cooked in one before so I was eager to try out some of my favourite recipes and see if the air fryer stacked up to normal deep frying. The result is really good,the chicken is crispy and golden, and there’s no need to lots of oil.

CRISPY AIR FRYER LEMONGRASS CHICKEN

PREP TIME

25 minutes (plus marinating)

Ingredients

4 chicken maryland pieces 

1/3 cup cornflour (cornstarch) 

vegetable oil or olive oil spray 

steamed rice, to serve 

sweet chilli sauce, to serve 

  

Lemongrass paste: 

2 lemongrass stalks, bruised, pale part finely chopped  

2 red shallots, chopped 

1 tsp sea salt 

3cm piece ginger, peeled, chopped 

2cm piece galangal, peeled, chopped 

2 garlic cloves, roughly chopped 

1 tsp ground turmeric 

1 tsp ground cumin

Steps
Step 1

For the lemongrass paste, place the lemongrass, shallots and salt in a mortar. Use a pestle to pound to a medium coarse paste. Add the ginger and pound again until a paste forms. Add the galangal and pound again. Then add the garlic and pound to form a paste (pounding after each ingredient makes it easier than adding them in all at once). Stir through the turmeric and cumin. 

Step 2

Cut the marylands in half to separate the leg from the thigh. Place in a bowl. Add the lemongrass paste and use tongs to toss to combine. Cover and place in the fridge for 2-3 hours or overnight to marinate if you have the time. Otherwise, these can be used straight away. 

Step 3

Add the cornflour to the chicken mixture and toss to combine.  

Step 4

Spray the basket of an air fryer with oil. Place the chicken in the air fryer, placing the thighs skin-side down (make sure there’s space between the pieces to allow the air to circulate). Spray with oil and cook, turning a few times and spraying with extra oil if necessary, for 25 minutes at 200°C/390°F until crisp and tender.  

Step 5

Serve the chicken with steamed rice and sweet chilli sauce.
