Pulled pork: so darn good (especially now I have a new Marion’s Kitchen meal kit for it!), but so many leftovers, am I right? A little really does go a long way, and when you’re cooking up a huge pork shoulder to feed the masses, there’s a good chance you’re going to have surplus. So what to do with it? Try these leftover pulled pork recipes, that’s what!

 

Be it a super sandwich, tasty roti wrap, Mexican-inspired nachos or piled on top of a humble baked potato, there are so many ways to use up pulled pork. And did someone say spring rolls, noodles and breakfast baked eggs? Oh, that’s right. I did! Enjoy, my friends…

What’s better than garlic chilli oil noodles? Pulled pork garlic chilli oil noodles. This recipe is super quick, coming together in under 10 minutes, and can be made extra tasty with the addition of your leftover pulled pork. The perfect addition if you’re after all the deliciousness with none of the added cooking time. Spicy, meaty, glossy noodles – you’re going to love this.

2. Pulled Pork Pizza

It’s the king of takeaways, but the true magic happens when you make your fave pizzas at home! Leftover pulled pork makes a delicious addition to your homemade pizza. Try a barbecue sauce base, then add pork, cheese and vegies of your choosing.

3. Pulled Pork Tacos

Tacos aren’t just for Tuesdays, my friends (as our best ever taco recipes prove). Serve warmed soft shells family-style with some pickled onion, shredded cabbage and guacamole, or whatever fillings you and your crowd like best.

The great thing about pulled pork is that it can be used in so many different recipes, and a little really does go a long way. Once you’ve enjoyed the bulk of it for your main meal, the leftovers can be put to good use the next day for a super-tasty, super-quick, super-fresh lunch with this pulled pork roti wrap. Imagine if a banh mi and a gyros had a baby, and you’re halfway to imagining this deliciousness that is this leftover pulled pork recipe.

5. Pulled Pork Sliders

There’s just something about mini, handheld food that makes it extra tasty. Sliders are one of my personal favourites when it comes to shrunken foods, and pulled pork is the perfect topping! I’d recommend slathering a lightly toasted brioche bun in homemade apple sauce or some classic BBQ sauce, before adding your pulled pork and a ‘homemade ‘slaw – divine!

6. San Choy Bow

San Choy Bow is a great way to eat salad and use up your leftover pulled pork in the process. Fill your crispy lettuce cups with rice noodles, fresh veg and your leftover pulled pork for a fresh and fulfilling weeknight meal. Top with some crushed peanuts and a spicy sauce, then get set for crunch and freshness.

For one of the best leftover pulled pork recipes, try using your extras as a spring roll filling! These crispy appetisers are soft and tender and have the irresistible pull of mozzarella with every mouthful, making them the perfect snack or starter to feed your loved ones.

8. Baked potato topping

Pulled pork makes the perfect topping for your baked spuds. There’s nothing better than a cheesy, buttery baked potato with a crispy skin – and I reckon the addition of pulled pork will really level up your next ‘tater. Combine with lashings of sour cream, salsa, guac and thinly sliced spring onions for extra freshness. If you’re a spice lover, you could even try adding some of our signature Coconut Sriracha – absolute bliss!

9. Quesadillas

Another Mexican-inspired option is a classic quesadilla. What’s not to love about a toasted, cheese-filled tortilla? The best thing about quesadillas is you can fill them with absolutely anything you like, so pulled pork is a great option. Add some guac, maybe some grated zucchini for upping your vegetable count, refried beans… anything that takes your fancy.

Here’s a great way to use up all of those pulled pork leftovers: add it to the most important meal of the day. This breakfast recipe is a fantastic and filling way to get through the shredded savoury goodness. Added to a skillet with some cheese, crispy potatoes, gooey egg and a tangy sauce, and it’s guaranteed to get your day off to the perfect start.

11. Pulled Pork Rice Bowl

If you’re looking for a quick, easy and fulfilling lunch idea, look no further than rice bowls. Rice bowls are the ultimate lunchtime saviour, and your leftover pulled pork will level it up to perfection. Start with rice, add loads of your leftover pork and go crazy with fave vegies and extras. Keep it fresh with some pickled veg like our Hoi An Chicken Rice Bowl, or go all out and add your fave cooked veg like the Smoky Sriracha Prawn Rice Bowl. Choose your own adventure friends – drizzle your fave chilli sauce and get ready for a lunch to look forward to.

Nachos are the perfect vessel for pork-y, cheese-y goodness. The pulled pork shown in these nachos was made from scratch, however it works just as well with leftovers AND takes a fraction of the time.

13. Pulled Pork Ramen

Pulled Pork Roti Wrap

Step 1

Preheat your oven to 140°C (280°F). Place the pork shoulder in a roasting tin lined with baking paper. Rub the fragrant spice mix from the BBQ Pulled Pork Kit all over your pork. Now scoop out 2 tablespoons of the Sticky Chilli BBQ Sauce and rub that over the pork too (save the rest of the sauce for later). Pour in enough water to reach 2cm up the side of the pork (the extra liquid keeps your pork juicy and createsa sauce at the end). Cover the pork with baking paper and then enclose the entire tin with foil. Slow roast for 3 hours or until fork tender, then remove from oven.

Step 2

Transfer the pork to a large bowl or tray. Use forks to pull the pork apart. Mix through the rest of the BBQ sauce and drizzle over some of the pan juices. Season with salt to taste.

Step 3

If you’re using up the leftover pulled pork the following day, you may want to drizzle the meat with a little water, then heat in the oven or microwave until warmed through and soft and tender again.

Step 4

To make a quick carrot pickle, mix together all of the ingredients in a small bowl until well combined.

Step 5

In a dry frying pan, toast the wraps for 2 minutes on both sides until slightly golden in colour – you don’t want them to get too crispy otherwise you won’t be able to fold it up! Divide the pulled pork between the wraps, placing into the centre of each round. Add lettuce, carrot pickle, chilli and coriander, plus a little extra chilli sauce or sweet chilli, if desired. Fold up bottom, then either side to enclose the filling. Serve warm.

Chilli Oil Pulled Pork Noodles

Chilli oil noodles are definitely having a moment… but no-one’s ever made them with pulled pork in the mix… until now! My hack for getting handpulled noodle-type vibes is also a total gamechanger – you’ll never look at lasagne sheets the same way again. Hold on to your hats, my friends: this is the recipe that breaks all the rules.

LEMONY GARLIC PRAWN RISOTTO

Ingredients

600g (1 lb 5 oz) pork shoulder

1 x Marion’s Kitchen BBQ Pulled Pork Meal Kit

1 x 375g (13 oz) packet fresh lasagne sheets

 

Spicy sauce

4 tbsp chilli oil (store bought or see my recipe for homemade chilli oil)

¼ cup vegetable oil

5 cloves garlic, finely chopped

¼ cup finely chopped spring onions (scallions), plus extra to serve

¼ cup fresh coriander (cilantro), stems finely chopped, leaves to garnish 

4cm piece ginger, peeled, finely grated

2 tsp chilli powder

1 tbsp sesame seeds

3 tbsp soy sauce

2 tbsp Chinese black vinegar*

2 tbsp sweet dark soy sauce

Steps

Step 1

Rub the fragrant spice mix from the BBQ Pulled Pork kit all over the pork, ensuring it’s well coated. Place the pork in the dish of a slow cooker. Next, pour over the sachet of sticky chilli BBQ sauce from the kit over the pork. Add in 1 cup of water to the base of the slow cooker so you don’t dilute any of the sauce on top of the meat, then cook on high heat for 4 hours (or low heat for 6–8 hours) or until super tender and fall apart.

Step 2

For the spicy sauce, add the chilli oil and the vegetable oil to a small saucepan and place over a medium-high heat for 2-3 minutes or until just hot. In the meantime, add the chopped garlic, spring onion, coriander stems and remaining ingredients to a large heatproof bowl. Give everything a mix until well combined. Once the oil is hot, pour it over the spicy sauce mixture and stir to combine.

Step 3

Rip the lasagne sheets into 2-3cm wide (around 1”) strips. Cook in boiling salted water according to packet instructions until cooked.

Step 4

Meanwhile, transfer the cooked pork to a board and pull apart to shred the meat.

Step 5

Use tongs to transfer the hot pasta into the spicy sauce mixture, as well as a heaped serving of pulled pork. Toss until well combined.

Step 6

Divide among serving bowls, then top each portion with a little more pork, followed by extra spring onion and some coriander leaves.

Notes:

– Otherwise known as chinkiang vinegar, you can find Chinese black vinegar from an Asian grocer. However, if you are unable to find it, substitute it with half balsamic and half white vinegar.

Sensational Dish

This was soooo good. The right level of sweet/hot spice/textures. Just divine. I used a high quality shop bought chilli oil. I might have to try Marion’s recipe next time.

Who knew?

I made this recipe the other night, so impressive. I used fresh gluten free lasagna sheets OMG they were amazing. Also substituted soy sauce with tamari. Spectacular, certainly be doing this again

Slow-cooker Thai Beef Noodle Soup

Step 1

Use a mortar and pestle to pound the garlic, coriander and peppercorns to a rough paste.

Step 2

Heat the oil in a large saucepan over high heat. Add the garlic mixture and cook for 30 seconds until fragrant. Add the beef and sear on all sides for 2–3 minutes, or until the meat is evenly coloured. Next, add the star anise, cinnamon stick, soy sauces and beef stock. Transfer everything to a slow cooker. Cook on the medium-low setting for 8 hours until the meat is deliciously tender.

Step 3

Use a slotted spoon to scoop out the cinnamon stick and star anise and discard. Next, use the slotted spoon to transfer the beef pieces to a chopping board. Set aside until ready to serve.

Step 4

Add the beef balls (if using) and Asian greens to the remaining broth in a slow cooker, turn the heat up to medium-high. Simmer for 2-3 minutes or until the beef balls have warmed through and the greens are tender. Taste the soup and add fish sauce to taste.

Step 5

Divide noodles among serving bowls. Top with beef balls, Asian greens, braised beef and ladle over the beef broth. Serve with bean shoots and Thai basil leaves.

Delicious ! Comforting and fragrant

I tweaked the recipe slightly based on the ingredients I have.

The result is excellent.

With minced beef, I let it cook for 2h15 in the rice cooker, on the slow cooking mode.

What scent in the house while cooking…

I used a beef broth flavored with coriander stems and Shanghai noodles. I also had some enoki on hand that were added at the very end of cooking.

A real treat.

Preheat the oven to 160°C (320°F). Season the beef generously with salt.

Step 2

Heat the oil in a large flameproof casserole dish with a lid over high heat. Spread out the beef and cook, turning, for 10 minutes or until browned.

Step 3

Add the curry paste and cook, stirring for a minute until lovely and fragrant. Add the coconut milk and beef stock, then stir to combine. Cover with a lid. Transfer to the oven and cook for 2 hours or until the beef is very tender.

Step 4

Transfer the beef to a large bowl and use forks to shred the meat. Drizzle over a few tablespoons of the pan juices and mix through.

Step 5

Pile the beef in tacos with the cabbage, tomato, shallots, coriander and a dollop of sour cream. Serve with lime wedges.

Taco Tuesday Just Got Better!

These tacos are next level! The richness of the massaman complements the fattiness of the beef beautifully. In my oven, it needed an extra 30 minutes to get to the right tenderness, but oh my, was it worth it! Serve with a nice kachumber or pico de gallo on your tacos to cut through the richness.

Step 1

To prepare, preheat the oven to 150°C (300°F).

Step 2

Place a large frying pan over high heat and add the vegetable oil. Add beef cheeks to pan and sear on one side for 4–5 minutes or until a nice crust is formed. Flip and repeat on the over side. Transfer the beef cheeks to a deep baking dish (make sure you reserve all those lovely pan juices) and season generously all over with sea salt.

Step 3

Add the curry paste to the pan juices and turn the heat back onto medium. Stir and warm through the curry paste for 1 minute to release all the aromas until it all starts smelling beautiful. Now go in with the coconut milk, fish sauce and 1 cup of water. Stir and continue cooking until the mixture just simmers, adding a little more fish sauce to taste if needed. Pour the curry sauce over the top of the beef cheeks. Cover the baking dish with a layer of baking paper, followed by a layer of foil, then transfer to the oven. Cook for 6 hours or until cheeks are fall-apart tender.

Step 4

Meanwhile, for the super-crispy roast potatoes, bring a large pot of salted water to the boil. Cook potatoes for 10 minutes or until tender, then drain in a strainer. Cover potatoes with a tea towel and vigorously shake to rough up the edges and make them craggly – this will help them get nice and crispy. Allow the potatoes to completely cool and dry out under the tea towel.

Step 5

Place the lard In a separate large saucepan or frying pan over medium-high heat until the lard has melted and is hot.

Step 6

Carefully add the potatoes to the hot lard. Moving them around constantly, cook the potatoes for 5 minutes until the edges are ultra crispy and golden brown. Transfer to a tray lined with paper towel and sprinkle with some sea salt.

Step 7

Bring a small saucepan of water to the boil. Cook green beans for 2 minutes or until tender, then drain.

Step 8

Remove beef cheeks from the oven and transfer to serving plates. Whisk the remaining sauce until well incorporated, then drizzle over beef cheeks. Serve with crispy potatoes and green beans.

Season pieces of osso bucco all over with salt and pepper. Place vegetable oil into a large saucepan over medium-high heat, then add the seasoned osso bucco. Cook for 3 minutes until brown on the one side, then flip and cook for another 3 minutes until the other side has coloured too. Transfer beef to the pot of a slow cooker.

Step 2

Reduce heat to medium and saute annatto seeds for 1-2 minutes until the excess oil becomes red. Now remove and discard the annatto seeds, leaving the remaining oil behind. Add in the onion and garlic, plus a good pinch of salt, and saute for a further 2 minutes until tender and translucent. Add 1 cup of beef stock to deglaze the pan and, using a wooden spatula, gently scrape off any bits from the bottom of the pan – they’re full of flavour! Transfer liquid and softened onions to the slow cooker.

Step 3

Place a small frying pan over high heat and add the sticky rice. Keeping a close eye on it so it doesn’t burn, gently toast the rice until it’s a deep golden colour. Transfer to a mortar and use a pestle to grind to a fine powder.

Step 4

Turn the slow cooker on high heat. Add the ground rice to the slow cooker followed by the peanuts, eggplant, peanut butter and the remaining beef stock. Give everything a gentle mix to incorporate the peanut butter into the liquid. Then cover the stew with a lid and leave to do its thing for 3 hours, or until the meat is falling off the bone. (If your slow cooker doesn’t have a high setting, you can put it on low for 6 hours.)

Step 5

After the first cook is complete, open the lid of the slow cooker and add in the beans. Season the stew with the vinegar, fish sauce and brown sugar. Give everything a good mix around to make sure all of the ingredients are well incorporated, then place the lid back on and cook for a further 20 minutes until the beans are tender. Serve with steamed rice.

Notes:

– Annatto seeds come from the anchiote tree and are used to impart a bright red/orange colour to foods. Search them out at an Asian grocery store or online.

Absolute Comfort Food!!!!

This dish was absolutely delicious, I had to change the peanut butter to cashew butter due to allergies, and changed the beef to lamb shanks. Absolutely perfect dish, kept getting better every single day reheating it. Absolutely moorish. Thank you!

Out of this world!

Marion dish was ‘other-worldly’. The depth of flavor made me savor each spoon and bite. The flavors took me a journey, the peanut butter, beef, fish sauce and vinegar on their own can be pungent flavors but they were actually layered – like she’d say “made friends”. Thoroughly enjoyed this!

When the weather takes a chilly turn, it’s time to reach for the slow cooker. I love the process of prepping my dinner in the morning and then letting everything get friendly throughout the day. Come evening, all my ingredients have worked together to create a belter of a dish, with flavours drawn out over the course of a few hours, plus soft, fall-apart meat guaranteed to put a smile on your face. My friends, I give you my best slow cooker recipes to date. Cosy on up, and chow down on these comforting delights.

This cheat’s version of Chiang Mai noodle soup tastes like heaven in a bowl… and couldn’t be easier, thanks to your often-overlooked slow cooker. It’s also a great way to use up any leftover Thai red curry paste you may have in your fridge.

The beauty of this dish is that there is virtually no prep time – just mix the marinade, add it to the chicken wings and let the slow cooker do the rest. What you get at the end is the most divine sticky and sweet chicken wings that the whole family will love. The chilli lime flakes at the end are what I call sprinkles for adults! They’re fiery and salty, but if you like it less spicy (or are making this for your kids) just use less chilli flakes. 

Incredibly tender and sticky chilli and ginger beef (thank you, Marion’s Kitchen marinade!) cooked low and slow, spooned over springy noodles… this is weekend cooking at its best. It tastes even better the next day, so feel free to make ahead or save some for leftovers!

Using a slow cooker means you can go about your day knowing dinner is taking care of itself, which is why I love this pulled pork recipe (although your oven also does the job equally well!). It’s tender, sticky and pairs perfectly with a fresh and fragrant Asian ‘slaw. Pack it in bao buns or brioche rolls, encase it within a soft tortilla wrap, slather it on top of cheesy nachos… or just enjoy as is.

One of my favourite family recipes, these delightful beef ribs are so soft and tender, there’s no knife required. The marinade has a chilli kick that’s full of sass, although you can dial it down by using long red chillies instead of spicier varieties if needed. The long cook time makes this perfect for lazy weekend cooking, and trust me – it’s totally worth the wait. A slow cooker recipe to treasure, if you ask me.
